Split Pea Soup

Thought I'd give this a try, as it is good comfort food. Simmered the peas on the stove for about 3 minutes, then soaked for about 1.5 hours before adding ingredients and cooking futher. Added frozen baby carrots, dash of thyme and rosemary, black pepper, finely chopped onions, & real bacon bits for flavour. Didnt have celery, ham or potatoes, and the texture and taste were still great! DH liked it enough to take to work. A success. thanks for sharing.

Orange Cream Fruit Salad

Made this for a work party. Absolutely flavorful, rich-tasting, like a "dreamsicle" pop. I modified a few things, based on reviews--cut back on the milk to 1/4 cup, drained all juices from canned veggies to prevent fruit from browning, added red seedless grapes, sliced apples, strawberries, fresh pears. You can play around with this recipe and it just delicious. Better than the Pistachio dessert. A winner! Thanks. Alison

Ali's Greek Tortellini Salad

I tried this for a work party and made a few changes: added grape tomatoes, imported olives, flavored feta cheese--basil/tomatoe and herb flavor--balsalmic vinegar and the red wine vinegar, scaled down on the olive oil, sprinkled some Italian herb seasoning, a bit of fresh garlic. Bought the three-cheese tortellini and cooked it. Be sure and dry the baby spinach thoroughly with paper towels. Otherwise, it gets too soggy. It was a refreshing change. Thanks. Alison

BLT Salad

I made this for a baby shower---it was good. Added grape tomatoes, hard-boiled eggs, avocado, extra bacon, and adjusted the dressing as others suggested--garlic powder with parsley, sour cream, Miracle Whip, milk, Whipping cream, and shredded cheddar cheese. used store-bought croutons. Baby spinach and cut-up Romaine lettuce added a nice texture. Great for summer.

Pizza Casserole

Your basic recipe is good, but I use Kraft Mac and Cheese, make according to directions. Saute extra-lean ground beef with onion, green bell pepper, garlic. Add two jars Ragu Pizza Quik, and two pkgs sliced Hormel Pepperoni, then bake as directed 350 for about 45 minutes. Yum. Is the most requested recipe by family, and at work. Delicious and easy for kids of all ages. Alison

Avocado, Tomato and Mango Salsa

I tried the Mango salsa today. Absolutely fabulous!! A flavorful blend. Everyone wanted the recipe, it was gone in just minutes. Thick, chunky. The only thing I would do differently is get less ripe avocados, and more ripened mangos. Papaya is a nice touch also. Am making this again, as people cant seem to get enough! A true five-star keeper. Thanks for sharing this.

Stuffed Mushrooms with Spinach

Have made this requested recipe several times for parties, and everyone loves it!! I make sure I drain the spinach thoroughly, and I didnt drizzle too much butter on top. Absolutely tasty!

Christmas Breakfast Sausage Casserole

I tried this recipe for a work brunch,and it was almost all gone before I got to sample a small piece. I cut up the sausages into small bits, and dotted them on top before baking. You can add bacon, broccoli florets, etc to make it interesting. Will make this again. Thanks for sharing.

Streusel Apple Coffeecake

I tried this recipe today, as I was looking for something unique. Fabulous! At first, I was worried about the topping and overflowing the bundt cake, but it came out perfectly. I used cooking spray and flour to prepare the bundt cake. As another reviewer suggested, I added applesauce to make it extra-moist. Will make this again. I only got to taste a small slice, so will have to make a double batch next time. Thanks for sharing.

Upside Down Pizza

I tried this version. Fabulous. I did make some changes---I added one chopped green bell pepper, substituted Ragu Pizza Quick sauce (2 jars), and added sliced pepperoni (one package) to the mix. Forgot cresent rolls, but am sure they are good. Gets fabulous reviews from all ages. 5-star! Thanks for sharing this.

Becky's Chicken Salad

I have never made chicken salad before. This was fabulous. I added red grapes, a bit of dijon mustard, 3-4 Tbsp. green pepper (didnt have celery), a dash of onion salt. Bought a chicken already cooked, and added 1/4 cup Miracle whip. Hubby sat there eating it as he was adding ingredients. You have a fan with this recipe.
