I tried this about a month ago. It was fantastic and I will be making it again this week. My bf is P.Rican- he also loved it. The meat is very tender and the spices make it very appetizing. It isn't very expensive to make, assuming you already have most of the spices. My bf's mom makes sofrito on a regular basis and always gives me a big container of it. I put about 1/3 cup into individual plastic bags, refreeze, and use whenever I need it.

Easy Slow Cooker French Dip

It was good. I wouldn't say GREAT, but it was a nice change. Definitely make sure you remove as much fat as possible, otherwise you will end up with a top layer of hard fat when it cools down.

Italian Sausage Soup

Like everyone says- this is excellent! Judging by the name, I wouldn't have thought this to be so good! I did use 2# of italian sausage instead of 1, and it was perfect. I used half frozen spinach, half fresh spinach. My boyfriend added rice to his, and next time I may add corn. I will definetly make this again soon!

Good recipe, and you can play around with the ingredients to fit your taste. I replaced about 1/4 c of butter with white wine. Next time I will use less mustard (maybe I overmeasured?) and maybe a little more fresh squeezed lemon juice.

Crab Dip

This recipe is awesome! My boyfriend begs me to make it every single weekend. Instead of using canned crab, I go to the supermarket and buy it from the salad bar. It seems to be cheaper that way, and you can use more. This recipe is definetly a keeper!

Coconut Shrimp I

This was a good recipe, although I personally felt the sweetness took away from the taste of the seafood. It was still good, though! The refrigeration process definetly helps the batter stick to the shrimp. Next time I'll just use less coconut.

Artichoke & Spinach Dip Restaurant Style

I thought this was pretty good. I did have a bit of a hard time squeezing the soft garlic out of the middle. I ended up just breaking the cloves in small pieces and adding them to the dip. I also used a blender, which made it easier. Of course this recipe doesnt compare to TGI Fridays and Applebees spinach artichoke dip, but overall it was pretty good.

Eggplant Parmesan II

I guess I really didn't feel like this was a 5-star recipe. Personally, I think it would have been a bit better if I would have added ground beef. Perhaps I will make it again, but only because my boyfriend liked it!
