About this Cook
Cooking relaxes me. If I have a hard day at the office, I just love to come home and cook a big meal. My husband loves it too.
My favorite things to cook
Love to cook stir-fry, spaghetti sauce and big pots of soup. Creating new recipes for chicken.
My favorite family cooking traditions
Baking the holiday cookies and candies.
My cooking triumphs
Seeing a dish at a restaurant or in a magazine and then going home and duplicating it without a recipe.
My cooking tragedies
A few years ago, I was making beef stew in the crock pot. I wanted to thicken it up without using flour so I went to the store and picked up what I thought was cornstarch. (I bought it in bulk) I used about 1/4 cup and stirred it in. It turned out to be cornmeal.

Spicy Albondigas
I'm about to sit down to this for dinner and I can't wait! Just by tasting as I went I had to give it 5 stars. I did cook the meatballs first to cut down on the fat and I also added bell peppers and zucchini. Mmm... mmm... good!! Thanx!

Quick and Easy Green Chile Chicken Enchilada Casserole
Oh my gosh this was so delicious! I will never make enchiladas the traditional way ever again. You get more bang for your buck with this one. I had all day to make it so I went the extra mile and cooked the chicken in the crock pot with a bottle of tomatillo salsa. Then I mixed the shredded chicken with the sour cream and added a can of diced green chiles. I cut the tortillas into 4ths and then coated them in the green sauce. I did not pour more sauce over the layers and I'm glad I didn't. It was absolutely perfect. Not soupy, not dry and oh so heavenly. Oh I did add some chili powder and cumin to my chicken mixture and I also topped the whole thing off with green onions and black olives. This is definitely a keeper! Thanx!

Six Can Chicken Tortilla Soup
This gets 4 stars just for the ease of it. As far as taste goes, pretty good considering it came from only cans. Of course fresh is best but I like to sub a can of hominy for the corn. It really gives it a more "authentic" flavor. Add some cumin and chili powder and you've got a 5 star winner.
