Irish Cream Brownies
I made this with Kahlua and it was very good but I got the comment that is was too sweet. I ended up toasting some almonds and topping the frosting with them. It was delicious and cut the sweetness.

Enchilada Sauce
This recipe is very authentic. I'm from San Diego and this is the way they make enchilada sauce in many Mexican restaurants. It does take more time but it has a better flavor than the canned sauce I use when I'm in a hurry. You can use different dried chilis to get different tastes and degrees of spiciness. This sauce also works for making chili.

Warm Crab Parmesan Dip
I reduced mayo to 1/3 cup and used green onions as suggested by reviewers. I added a cup of chopped shrimp and a dash of worsterchire to the recipe and let it sit in the fridge for most of the day and that really brought out the seafood flavor. Cooked it and served with crackers, chips and veggies. Everyone loved this dip on Christmas day and I loved the compliments!
