Rosemary Ranch Chicken Kabobs

I made this for 100 people last weekend, for 80 people the weekend before and for 70 the weekend before that. I can't tell you how many asked for the recipe and how many said it was the best meal they'd ever had. I marinated whole chicken breasts for about 6 hours. I took them out of the marinade, scored them lengthwise several times and grilled them on a gas griddle. When they were done, I cut them in strips and put them in an electric roaster with the marinade. I let them slow cook on low heat for about and hour and a half. Served over white rice with the marinade as a topping gravy. Broccoli with garlic butter and cashews and a roll. Beautiful plate, wonderful meal!

Unbelievable Chicken

Made this for 16 of our college kids. I used 18 chicken breasts that we got a Sam's that were close to 1 lb. apiece. I tripled the recipe and had plenty of marinade. I didn't change a thing in the recipe and the results were just as it's titled...Unbelievable. This is the best chicken marinade I've ever had. Out of 18 lbs of chicken only one small breast was left. They absolutely loved it!

Apple Enchilada Dessert

I have got to give this recipe a 5 star rating because I've made it several times before, but tonight was another story. I had this on the menu for supper for 15 people, 11 of them college kids. 2 of the kids were making them while I supervised. They did a great job. They stuffed them and rolled them and drizzled them with sauce and sprinkled the cinnamon over them. The enchiladas were looking wonderful and when they came out of the oven we were so excited to eat them. We scooped the ice cream on top, drizzled it with the sauce and served. By the time I got mine I noticed that the kids were whispering. I looked at my husband and he said "they think it tastes like chicken". WHAT? Apple enchiladas sprinkled with cinnamon can't taste like chicken...not if you sprinkle them with cinnamon. Did you know that cinnamon and cumin look exactly like?

Layered Lemon Dessert

This was good, alot like lemon meringue pie without the meringue. I don't know what the purpose of the vinegar is but I'll probably leave it out next time. It gives it a wierd taste.

Three Cheese Manicotti

Great! Served it to 11 college kids and they couldn't get enough. Will make more cheese mixture next time though. Adjusted the recipe for 15 people and it only made 18 shells. Not enough for everyone to have two.

Italian Beef Sandwiches

Okay, I just served this to 25 people at our church "college night". Oh my gosh! They absolutely loved it! One man came up to me and said "This is the best thing I've ever had! I really mean it, this is the BEST thing I've ever had!" Everyone loved it. It's easy to make and soooo good. I served it on hoagies with provolone, and green peppers and onions that I cooked in olive oil with the broth on the side. You gotta try this one! Update to review: I used this recipe to serve 60 people at a retreat. I didn't have the budget to buy roast so I substituted brisket. I have to say, it's just as good and so much cheaper! I trimmed all of the fat off that I could get off and then cooked it exactly the same. EVERYONE that eats it absolutely loves it!

Herb-Crusted Chuck Roast

I made this exactly the way the recipe was written, no changes at all. Very disappointed. The meat had no flavor and was very dry. Not at all what I expected.

Wish I would've read the reviews before I made these. The sugar ruins the recipe. I think they would've been great if I had left it out. Also had to add more cream.

Chicken Tortilla Soup III

Fantastic Soup! I serve this in my coffeehouse and get nothing but rave reviews from my customers! I dump all of the ingredients in a crock pot in the morning, turn it to medium and it's ready by lunch. The only thing I do differently is to whisk about 1 1/2 cups flour into the chicken broth. This gives it a little thicker consistency. I also use dried onions instead of fresh and a large can of chicken (saves alot of time!). Try it, it will be one of your favorites!
