My cooking tragedies
I had apple enchiladas on the menu for dessert for 15 people, 11 of them college kids. 2 of the kids were making them while I supervised. They did a great job. They stuffed them and rolled them and drizzled them with sauce and sprinkled the cinnamon over them. The enchiladas were looking wonderful and when they came out of the oven we were so excited to eat them. We scooped the ice cream on top, drizzled it with the sauce and served. By the time I got mine I noticed that the kids were whispering. I looked at my husband and he said "They think it tastes like chicken". WHAT? Apple enchiladas sprinkled with cinnamon can't taste like chicken...not if you sprinkle them with cinnamon. Did you know that cinnamon and cumin look exactly like?

Rosemary Ranch Chicken Kabobs
I made this for 100 people last weekend, for 80 people the weekend before and for 70 the weekend before that. I can't tell you how many asked for the recipe and how many said it was the best meal they'd ever had. I marinated whole chicken breasts for about 6 hours. I took them out of the marinade, scored them lengthwise several times and grilled them on a gas griddle. When they were done, I cut them in strips and put them in an electric roaster with the marinade. I let them slow cook on low heat for about and hour and a half. Served over white rice with the marinade as a topping gravy. Broccoli with garlic butter and cashews and a roll. Beautiful plate, wonderful meal!

Heavenly 'Apple of My Thigh' Dessert
Made this for our college night ministry. The best comment I heard was "Oh wow, it's like a party in my mouth!"

Unbelievable Chicken
Made this for 16 of our college kids. I used 18 chicken breasts that we got a Sam's that were close to 1 lb. apiece. I tripled the recipe and had plenty of marinade. I didn't change a thing in the recipe and the results were just as it's titled...Unbelievable. This is the best chicken marinade I've ever had. Out of 18 lbs of chicken only one small breast was left. They absolutely loved it!
