Italian Sausage Soup

I made this with spicy italian sausage, added an onion while cooking the sausage, twice as many tomatoes, and 1 cup of orzo along with the zucchini. Would add a few more cups of broth (total 6 cups) next time as the orzo made it a bit thicker than expected. It was delicious!

Bob's Awesome Lasagna

Love this recipe! I use my own home made tomato sauce and instead of a layer of cottage cheese and a layer of cheese, I mix the cottage cheese with the cheese and add an egg to make it hold together a bit better and LOTS of spinach to add some veggies and up the taste a bit. On top I sprinkle extra mozza cheese mixed with a bit of parmesan. A big hit for my whole family!

Grandma Ople's Apple Pie

This was delicious! Made for Thanksgiving and everyone raved about it. I added cinnamon to the apples because I like my cinnamon in an apple pie :-) Otherwise I made it exactly as the recipe stated. 8 apples was the right amount for a 9 inch deep dish. Next time, I will probably slice the apples a little thinner and use a mix of apples instead of all granny smith as they were just a little too tart and a little too firm. I will also probably pour most of the sauce on the apples directly and then brush some on the lattice work after. I think the lattice work really does visually make this pie - it is worth the extra effort and is really not that difficult - check out instructions on youtube if you've never done it before :-)

Greek Lentil Soup (Fakes)

Excellent! The only change I made is to use chicken broth instead of water. Served with the red wine vinegar, the drizzle of olive oil, and toast with chevre spread on it... oh my! Absolutely delicious - I will be making again and again.

Scalloped Potatoes and Onions

Delicious! Really like this version without the milk base. Cooked for about 3 hours total, 1 hour uncovered with some cheese melted on top for the last half hour or so. Was a big hit with everyone!

Whole Wheat Banana Nut Bread

I substituted unsweetened applesauce for the oil and added a bit of extra banana. SO GOOD! My new banana bread recipe - healthy and delicious - can't ask for anything more!

Brown Rice, Broccoli, Cheese and Walnut Surprise

I'm loving this recipe! I made a few changes based on others' recommendations: I used chicken broth instead of vegetable broth, regular brown rice, extra broccoli, and mixed it all together and baked it for 15 min. I ate it as a main course for lunch which was great, but am thinking it would be an awesome side dish with some nice baked fish... mmm.... I will definitely be making this again.

Cream of Jerusalem Artichoke Soup

Not sure if I did something wrong, but I found that the Jerusalem artichokes did not soften enough to puree smoothly - I even simmered them for an additional 20 min before trying to puree them. The texture was too rough for a cream soup and unfortunately, this kind of ruined the soup experience for me. Outside of the texture - the taste was good - different but good.

Greek Pasta with Tomatoes and White Beans

I thought this was a great simple meal - easy to make and so good! I also used plain diced tomatoes instead of the italian style. I sauteed some garlic and onion first, added the tomatoes along with 1 tsp salt, 1/2 tsp sugar, and some italian seasoning and let simmer for about a half hour, then adding the beans, fresh basil, and spinach. Absolutely delicious!! Will be making on a regular basis... mmmm...

African Chicken Stew

This is delicious. Spicy! After reading the reviews, I also used sweet potato in place of the regular potato and added a few carrots. Also, I didn't have any chickpeas / garbanzo beans, and can only imagine that it would be even better with them. Can't wait to make it again.

Russian Mushroom and Potato Soup

Absolutely delicious. I followed the recipe exactly except I used whole milk instead of half and half as that is what i had on hand. I used brown mushrooms - were great - meaty and lots of flavour. Look forward to trying with a mix of fall mushrooms available. A delicious and hearty fall recipe with great flavour. Will be on my list of favorite soups!

Italian Spaghetti Sauce with Meatballs

I have made this several times and I would give this 10 stars if I could. Absolutely the best spaghetti sauce I've ever made - my boyfriend loves it, too, which is a good sign :) I also really like the mild flavour of the meatballs with this sauce. Cooking the meatballs in the sauce makes this easy and delicious. I use this spaghetti sauce with all dishes that call for spaghetti sauce because I love it so much. Make sure that you let the sauce simmer for the 90 minutes recommended in the recipe. This really lets the flavours melt together. Mmmmmmmmmmm... enjoy!

Gnocchi Bake

This was yummy. As with any tomato sauce based dish, the sauce you use makes all the difference. I highly recommend using the spaghetti sauce from the 'Italian Spaghetti Sauce with Meatballs' recipe on this website. My favorite. Also, I didn't like the texture of having the cheese baked into the dish - it came out a little hard and stringy. Next time I make this, I will only put cheese on top :) Enjoy!

Pumpkin Turkey Chili

I made this with leftover turkey and pumpkin puree from thanksgiving dinner (in canada, eh). The texture and flavour of the turkey breast in the chili was amazing - am sure it would also be good with the ground turkey. Overall, the recipe is really great, although I added twice as many crushed tomatoes. The sour cream and cheddar cheese served on top are essential. This will become a favorite after thanksgiving recipe for me :)

Chuck's Favorite Mac and Cheese

Maybe not fair of me to rate the recipe as I made a few changes. I added some milk like other reviewers suggested, and also added some broccoli and cauliflower. I think I'll serve the veggies on the side next time and stick to just pasta with the cheese sauce. It tasted great but was not crazy about the consistency... but this will improve with the veggies removed I'm sure.
