Vegan Split Pea Soup I

Very nice soup, but wow, "very thick" doesn't even begin to describe it! I added maybe double the water and it still came out almost solid. Tasty and easy to make though! I used sweet potato instead of regular potato because that was what I had. Otherwise kept it the same.

Pumpkin Corn Bread

These muffins are really delicious. I replaced the oil with more pumpkin and added cinnamon and ginger. They turned out fantastic! So much flavour, very moist, and the perfect mix of my two favourite muffins! Much better than I even thought they would be :D

Orange Pecan French Toast

This went over really well with my family, everyone loved it. Very easy to make too. I made it with some egg bread, just cut it into chunks and it comes out kind of like a bread pudding - yum!

Magic Peanut Butter Middles

Raspberry Almond Coffeecake

This cake always turns out well - I make it with yogurt instead of sour cream and as mini cakes in a muffin tin, using the same layering method. They are delicious.

Lemon Cranberry Muffins

Delicious. Made mine with raspberries rather than cranberries and added lemon zest. Turned out great, made 12 large muffins with big tops. Very moist.

Raspberry Coffee Cake

Delicious and oh so moist, and best of all, almost healthy. I used whole wheat flour and fruit flavoured yogurt, and added some cinnamon and ginger. For the frozen raspberries I substituted frozen mixed fruit (mango/peach/strawberry). I don't have a round pan, so I made 9 mini cakes using a muffin tin, and baked for around 25 minutes. They turned out fantastic. Perhaps a bit too sweet but otherwise perfect!

Oatmeal Waffles

These turned out really well. I love that they are pretty healthy too. The batter was a bit thin but they still turned out. I added vanilla and cinnamon. I store them in the freezer and then crisp them up in the toaster.

English Butter Tarts

Really good recipe, super easy. They were the best butter tarts I ever tasted. Instead of raisins I used a mix of dried cherries and chopped pecans, yum! They are a bit runny but that's what makes them so good.

Tomato-Curry Lentil Stew

This is delicious, quick, and easy! I added extra curry and a bit of dried basil. I also used an entire can of tomatoes. It came out delicious, especially for such a simple and easy recipe with so few ingredients. Can't wait 'til tomorrow for leftovers!

Favorite Banana Blueberry Quick Bread

This turned out really good! I doubled the blueberries and used butter because I had no shortening, but otherwise I kept it the same! Everybody seemed to enjoy it. My only problem was how long it took to bake, finally after about 1h15min I took it out, but the center was still a bit wet once I cut it. Oh well, I kinda like it gooey anyway!

German Apple Cake II

Not a bad cake, but not outstanding or anything, as I would have expected based on the reviews. I agree with another reviewer that it wasn't exactly very "apple-y" - really, it was too sweet to even notice the apples much. Very moist and easy to make, but not a massive hit. Just good.

Summer Corn Salad

Easy and delicious. I used defrosted frozen corn kernels - about 6 cups worth. I also used red onion, it was giant so I only put a half or else it would have been super onion-y! I also chopped up a jalapeno and sweet red pepper and added those. Turned out delicious! Also didn't need all of the oil, only used about half, as others had suggested. It went over well at the potluck I brought it to!

Mashed Sweet Potatoes

I took the advice of another reviewer and used 1/4c brown sugar and 1/2c honey because I had no maple syrup. I didn't have to add any milk, it was already liquidy enough. It turned out well and was really easy with the mixer doing the mashing. Turned out a bit sweet, I'd say you only really need 1/2 that amount of maple syrup, but it was very tasty.
