Pumpkin Protein Cookies

These cookies are fabulous. Moist, chewy, sweet and delicious. I make them with 1/4c brown sugar instead of Splenda. I've made them with either pumpkin or 2 mashed bananas, both turned out delicious.

Pretty tasty cookies that are easy to make. I doubled the recipe and it made about 30 cookies. The cookie part could have been a bit moister but overall they are quite good.

Kerry's Sweet Potato Latkes

These turned out quite tasty. Instead of small ones, I just made 4 large latkes. I didnt' want to fry them, so I cooked them on my pancakes griddle for about 5 minutes per side and finished them off in the oven. Great taste!

Baked Falafel

These are really good and super easy to make. I have to admit I made lots of adjustments based on what things I had on hand; I used lentils instead of chickpeas, leeks instead of onion, and a stalk of celery instead of parsley. In any case they still came together great, crispy on the outside and moist on the inside, and very flavourful. I cooked them for 3 minutes on my pancake griddle before transferring to the oven for 15 minutes.

Connie's Zucchini "Crab" Cakes

These were delicious and much more flavourful than I expected. They were also very easy to make. I grated 2 relatively large zucchinis and drained them as recommended. I did not fry them in oil but instead just grilled the patties on my pancake griddle. They came out perfect!

Baked Oatmeal Squares

Really easy and quite tasty. I only used half the sugar (1/4c) and they were more than sweet enough. I used half almonds and half cashews for the nuts. These make a really nice quick snack or breakfast. I have to agree with other reviewers though that these are not exactly portable "squares" per se. They do hold together but are delicate and may fall apart a bit when you eat them. Next time I will try subbing in some banana as other reviewers have recommended. Sounds delicious.

Aunt Norma's Rhubarb Muffins

Moist and tasty. The rhubarb really adds a great flavour; I also added some chopped strawberries instead of the nuts. I made 1/2 the recipe and it yielded 10 muffins rather than 12. They are actually quite sweet despite the rhubarb!

These are pretty good and also quick to make. I added some whole peanuts to add to the peanut butter taste. They were very nice and chewy. Not outstanding, but definitely easy and tasty.

Gingerbread Scones

These are fantastic scones. I only realized half way through that I was all out of molasses so I just subbed in more brown sugar. I made 18 mini-scones. They turned out great and were not dry at all, as other reviewers have said. I'll be making these again and again!

Pumpkin French Toast

Pretty tasty! I scaled it down to one serving and made it with a bagel and it turned out quite good. Definitely had a nice pumpkin taste to it. Also, the egg mixture was quite generous so you could really let the bread soak it up. Could use a bit of sweetness, but still delicious, I'll probably make it again.
