Ranch Oyster Crackers

These crackers are great, but make it easier on yourself...put oyster crackers, dried RANCH mix (package or homemade from this site), and olive oil (to YOUR taste for both) in a gallon size bag/bowl and mix. I do NOT bake...takes 5-10 minutes max and still a hit with my family and friends. (Yep, they ask for the "recipe"!!)

Slow Cooker Turkey Breast

I used two packs of soup mix since my turkey breast was almost 8 lbs (doubt it was needed, though) and it was delicious! I hate to admit this, but I have NEVER even cooked a turkey or turkey breast before and was SO excited to see a recipe for the slow cooker. I will be making this regularly...easy to freeze for sandwiches, salads, etc....no basting, no hot oven on for hours...what's not to love?

Two Ingredient Pumpkin Cake

I have made this numerous times, but I usually make as mini loaves or muffins. Always a hit and I have given the "recipe" to many people. I do sometimes add walnuts and/or raisins, but plain is also great. If the batter seems too thick, try adding small amounts of water until it's mixed. I haven't tried with icing, but that seems to defeat the purpose of a low fat/low cal alternative to cake. Worth a try either way!!

Potato Chips

I too was leary of the crisping/browning abilities of the microwave, but BOY was I pleasantly surprised! I took the advice of another and simply sprayed the dish with olive oil and then sprayed the potatoes (use a flat plate or they will slide while cooking). It did take about 7-8 minutes on high, but worth the time/wait. I didn't even season or peel them, just dipped into homemade ranch dressing once cooked. I have told everyone I know about this easy & healthy alternative. Dee-lish!

Awesome and Easy Creamy Corn Casserole

Wonderful corn recipe! I have made this about 4 times and have been asked for the recipe by at least 15 people. I huge hit at Thanksgving and cook outs.

Swiss Chicken

I have been making this recipe for years. I do not add water or butter and the consistency is great for serving over rice or pasta. I have seen where white wine has been mixed with the soup, but that is optional, of course. I too use seasoned stuffing mix, which eliminates any need for additional seasonings such as salt. (Especially since can soup has plenty.) I recently made this without the stuffing for a lower carb meal....de-lish! One last thought, I find using chicken tenders or bites (cut up breast) cooks more evenly and in less time....I use my toaster oven!
