Baked Pineapple Casserole

I really enjoyed this. It was very indulgent, but it would have been a perfect pairing for ham. A friend suggested I bring it as a side to my family's Thanksgiving dinner. Unfortunately my in-laws are not as into sweet dishes as my side of the family. No one really had anything good to say about it. I think it was just too sweet for their liking. I will still make this again, but I may cut back on the eggs. My friend said she does two egg whites and two whole eggs. Might be a good compromise. I also might cook it a little bit longer. I cooked it at the full 1 hour, but I think it could have been cooked a few minutes more.

Peach Pie

I used Trader Joe's pie crust and made miniature pies. I used a jar of TJ's peaches in white grape juice, which were sweet and perfectly ripe. I should have cut the recipe in half for the filling. I had more than enough. But overall it was perfect and easy. I'm saving this and will make again.

Broiled Lobster Tails

This was so easy, but it made me look good. I used everything but the white pepper, which I dislike. I used black pepper instead. But doing the preparation and broiling per the directions worked flawlessly! We had planned to grill our lobster tails, but rain kept us indoors. But this was probably better than the grill. Will definitely use this again.

Mini Meatloaves

Really enjoyed this for a Sunday evening dinner. It's definitely a keeper. I used a block of aged cheddar from Trader Joe's to grate 1 cup, and I only had old fashioned oats, so I used them in place of the instant ones, and it worked just fine. I did add 1 Tablespoon of dried minced onion and about 3/4 teaspoon of crystallized garlic. Kept everything else the same and absolutely love this!

Guacamole

This was so good! and I love that the tomatoes add to the texture of the guac. I love garlic, so I used about 5 cloves. But this was definitely better than anything I've bought in the store.

Toasted Pumpkin Seeds with Sugar and Spice

LOVED IT!! I never used to eat pumpkin seeds, but after this recipe, I couldn't stop eating them. I took Parrot07's suggestion and put them in a skillet with 1 T of oil and 1 T of butter and caramelized the seeds.

No Bake Peanut Butter Pie

Really an excellent recipe. I got several requests for the recipe after bringing it to a gathering. Personally I'd prefer a more prominent peanut butter flavor, so I'll use more peanut butter the next time, but overall an excellent and EASY recipe.

Very Best Blueberry Cobbler!

Very good. I used Tammydachef's suggestion and doubled the blueberries and used 4 Tablespoons of flour. Kept the sugar the same, though. It was very good. I also needed to cook longer, even using a 9x9. 35 minutes approx.

MMMMM... Brownies

The first batch I made with this recipe, I used an 8 x 8 glass pan. The smaller pan with a heavy glass pan required some extra cooking time. So when I first took them out of the oven, they were still runny inside. It took about 7 more minutes. So I tried a second batch in a standard brownie pan and made one tweak. I mixed 2 tablespoons of espresso powder into 2 tablespoons of the boiling water. What a difference it made! They were so rich and very fudgy. I did also throw in some chocolate chips for some chewy chunks. I will make this my go-to brownie recipe from now on.

Barbie's Tuna Salad

This was easy but very good. I didn't have curry, but I think it would have complemented it well. I used a little less mayo, but kept everything else the same. The dill is an excellent addition as is the relish. My husband and I devoured it.

Tender Breaded Turkey Cutlets

I really liked this. I do usually pick the low fat alternative, but in this case I only had regular sour cream. I also used Kellogg's Corn Flakes crumbs instead of seasoned bread crumbs. I think those two are the secret. The flakes stayed on because the regular sour cream was thicker, and the corn flakes were crispier. I pounded the cutlets to about half their original thickness and added Grey Poupon to the sour cream for a little added zing. I only needed the 1 T of olive oil, and these truly were a treat. What was left over from the night before made fantastic sandwiches the next day. Very satisfying!

Caramel Filled Chocolate Cookies

I really liked these! I didn't have any of the problems mentioned in other reviews. I followed the recipe and used Dove caramel filled choclates. I experienced to running of caramel with these. They tasted much better than the Rollo ones I tried just to compare. Neither ran, and I didn't even put them in the fridge. Made them right from the mixer. Not sure if I'll like them as much cold, but they are divine right out of the oven!

Mediterranean Turkey Pita Fold

Bread and Celery Stuffing

I've been using this recipe for years! I have never used chicken broth in mine, though. I guess I like it as buttery as possible. I always put some in the turkey and the rest in a casserole and bake it separately for those who don't like moister stuffing. It's truly the best comfort food!

Whole-Wheat Chocolate Chip Cookies

I never would have made this, but I read the reviews out of curiousity. I have always wanted to find a way to make my cookies a little "bulkier" like the ones in the bakery without adding a lot of hydrogenated oils. I substituted real butter for the margarine, and these things were so fantastic that I even gave them out to customers when I visited them today. I really have to be proud of what I make to do that. You won't know what you're missing until you try these!
