Holiday Chicken Salad

This was wonderful! I made it for a garden party of 14 people, made enough for 24 and all was eaten! Everyone loved it. I had four people ask for the recipe. I took someone's tip and added sunflower seeds (about 1/2 cup), as well as about 1/2 cup cut seedless green grapes. I served it with salad leaves and whole-wheat pita pockets for guest to make sandwiches. Delicious! Thank you again!

Baked Salmon Fillets Dijon

Very easy! Very tasty! I used whole seed mustard instead of dijon. I put a chopped tomato and chopped onion on top of the mustard instead of bread crumbs and it was wonderful! I also used garlic and oregano (on someone else's tip). All and all, very good!

Best Ever Muffins

These we're very tasty! I'm a film maker and recently take 3 dozen of these along on a week's film shoot. I made three different types, mixed spices and walnuts, mixed berry, and mandarin oranges with rasperry jam. All were good and a huge hit on the set. I think the mixed berry were the BEST! I used frozen berries. Very easy. I also used wholemeal flour instead of white....5-stars! I am looking forward to making (and eating) these again soon!

Lemon Poppy Seed Bread

Very easy to make! I made a few changes. Per many people's advice, I added more poppy seeds (almost 3 tablespoons total) and rather than use lemon extract, I used the zest and juice of one real lemon. I am a huge fan of lemon poppy seed anything but didn't think it was quite lemony enough, will add the juice of two lemons next time. I used whole meal flour and cut the oil in half (that was planty, I was glad I'd cut the oil!) and used olive oil instead. Also, I used Splenda instead of sugar which was fine for the bread but made the glaze sticky like glue. Will keep working on the glaze. Everyone loved this recipie and will make it again!!

Spicy Bean Salsa

This salsa is fantastic. I had to modify the ingredients a bit or what I had at hand. I used 8 med tomatoes instead of canned, used 3/4 cup of salad dressing, and used pinto and garbanzo beans instead of black eyed peas and black beans, and added a bit more jalapeƱos! Very tasty!!! I don't think I'll buy salsa again!

Pumpkin Cheese Bread II

This is WONDERFUL! It hasnt even cooled all the way and my gang has already gotten to a fourth of it! The cheese top is the best part. I put it all in one cake pan and it turned out fine. The only problem, there wasn't enough pumpkin batter left to fully cover the cheese level, but it seems fine other than that. I only put 1/4 cup olive oil instead, and doubled the orange zest. Fantastic, this one is a real hit!
