Shepherd's Pie Daddy's Way

Really good. The combination of the meat, soup and cheese melted together and made a cheesy, creamy blend that tasted excellent!!! The second time I made this, I added frozen corn on top of the meat mixture before the american cheese and added shredded co-jack cheese on top of the potatoes. My husband whom normally doesn't Shepherd's Pie thought this was really good and said he would like it again.

French Toast Casserole

We thought it was really good!! It smelled heavenly while baking!! We followed the recipe exactly but the edges didn't get any egg mixture so we made a bit more of the egg mixture with one more egg to soak all of the bread.

Good Old Fashioned Pancakes

This is my first time making pancakes from scratch. I made these as written for my first try. They were good and my daughter devoured them. I felt the batter was a touch thick for my tastes. Next time I make them, I will try to omit the salt, add a touch more sugar and a bit more milk. I may also try some of the other suggestions. I will be making these again though!!

Peach Cobbler VI

This was really good. I don't like when people rate a recipe and then say the changes they made, but I am going to do just that. My changes were very minor! When I tasted the batter, it seemed really sweet so I added a sprinkle of nutmeg. I also melted the real butter in the microwave directly in the 9x13. Then I poured the batter in the butter and swirled it together, not mix it. I added raspberries with the peaches and used a large can of peaches. Then sprinkled it with cinnamon. I brought it to a memorial day party with ice cream and the pan was scraped clean and the ice cream never even made it to the table. I also had requests for the recipe. Thanks!!

Chicken Puffs

My mom has been making these for years and now that my sister and I are married we also make it for our families. Our recipe calls for salt and pepper to taste, if not used, it is too bland. We also sprinkle crushed croutons on it altough I have used seasoned bread crumbs. For an appetizer party, I used puff pastry squares in mini muffin tins and then filled the shells and sprinkled bread crumbs on top and they were not only tasty bites, but pretty too.

Old-Fashioned Scalloped Corn

I made this for a family dinner. My brother-in-law didn't like it, but he likes nothing, especially casserole type things. The rest if us thought it was ok. It seemed to lack something, but we aren't sure what.

Baked Ziti I

This was really great. I followed directions except I put the sauce before the provolone cheese. I also doctored the jar of sauce, but I always do that to the sauce. My husband said that it was a solid 4 star. I served it with garlic and cheese flaky biscuits. I will make this again.

The sauce wasn't our thing. Only change I made was I didn't use mushrooms (we don't like them). Either it was too much or something was missing, we aren't sure which.

Sunshine Halibut

We really enjoyed this recipe. The citrus taste was very light. My husband had fish that he wanted to use so I needed a recipe for Halibut. I usually can't stand fish but did enjoy this and finished the small portion I took. We made no changes at all.

Orange French Toast

This was good. We had to layer to thinly sliced pieces of bread because we couldn't find thick sliced. They stuck together when baked and turned out really good. We used cinnamon raison bread and added a touch of maple syrup to the mix. Instead of dipping the bread into the mixture, we poured it over the bread and let it sit overnight before baking.

Ground Beef Enchiladas

I made these at the recommendation of my sister. My husband really liked them. I was skeptical of the Cream of Chicken soup at first, but found that it is really good. We don't like yogurt so I used sour cream instead. Being pregnant, jalapenos are too spicy so I used mild green chilis instead. I also used flour tortillas and co-jack cheese. One way of making them more quickly is layering tortillas and filling in a pie plate sprayed with nonstick spray and baking with cheese on top. This makes it into an enchilada pie of sorts and the cheese on top helps the visual appeal. This recipe also freezes well. I have also made this with cooked, diced chicken and it turned out wonderfully. I would recommend this.

Banana Muffins II

Good muffin recipe. I used quite a few of the suggestions and loved them. I used a mixture of whole wheat and white flour, 4 bananas, vanilla and cinnamon. I also sprinkled a bit of cinnamon sugar on the top before baking and it gave a sweet little topping. I have forgotten the sprinkle and thought it was much better with it. My husband and 3 year old love these muffins. My daughter helps by mashing the bananas.

Lemonade Pork Chops

I rarely make marinades because my husband prefers a rub, but tried this while he was at work. I poked holes in the chops and we grilled them. He really liked it and we will make this again. I think that I will try it with a touch of lemon pepper next time and eliminate one of the salts.
