Artichokes in a Garlic and Olive Oil Sauce

Reviewed: Mar. 27, 2008
It seems a little silly to review this recipe, since I changed so many things. Still, the result was very good, so I'll just detail the changes. I used 8 ounces of pasta, 2 T. of olive oil, and left the butter out entirely. 3 cloves of garlic, dried basil instead of fresh, and a 12 ounce package of frozen artichoke hearts instead of the canned ones. I added salt and pepper to taste, and at the last minute when I mixed everything together with the pasta, I added 4 ounces of cream cheese. I served it with parmesan cheese, and it was REALLY good. Do be sure to cook the artichokes until they're just starting to brown - the flavor is more intense that way.

Mocha Coffee

Reviewed: Oct. 8, 2007
Contrary to most of the other reviewers, I don't think this recipe as written is anything close to Starbucks. However, it is a good starting point. I'd recommend these changes: 1) Use about 1/2 a cup of extra strong coffee, instead of a full cup of regular. Brew with the same amount of grounds, just half as much water. This mimics espresso. 2) Use a lot more milk. Starbucks mochas are mostly milk, with espresso added. 3) Do use the full tablespoon of both chocolate and sugar. With these changes it came much closer to approximating a Starbucks mocha. I enjoyed it!

Brownies II

Reviewed: Apr. 20, 2008
Very, very good! I made two changes to the recipe: I added 1/4 cup of milk, and about 3/4 cup of chocolate chips. I baked them for 25 minutes and they were perfect - moist and chewy in the middle with a slight crunch at the edges. Definitely something I'll do again!

Double Nut Chocolate Chip Cookies

Reviewed: Dec. 4, 2007
Very nice, simple recipe for cake mix cookies. I used 1/2 a cup of chocolate chips and skipped the almonds (I didn't have any). They baked to a perfect not-too-soft/not-too-crispy cookie in 9 minutes as stated.

Persimmon Bread III

Reviewed: Nov. 27, 2006
I made this bread according to the directions, adding about 3/4 cup of chopped nuts as well. The result tastes good, but be warned that it is VERY dense and heavy. More so than a normal banana bread or pumpkin bread. I was thinking of giving these for gifts, but I have to say that I don't think they're good enough for that. Time to try a different recipe!

Giblet Gravy II

Reviewed: Jan. 10, 2011
I substituted about a cup of milk for part of the stock, because I like a creamy gravy. Worked perfectly, and reminded me of the gravy my grandmother always used to make.

I didn't have beer available, so I used chicken broth instead. It turned out really well! We will definitely do this again.

Sausage Rice Pilaf

Reviewed: Apr. 14, 2008
I followed the directions exactly, but after an hour of cooking, the rice was still hard. I cooked it for 2.5 hours, and still only some of the rice was soft, and the edges were burned. I will say that the flavors were wonderful, and I wish it had worked. I will try it again in the future, but I will cook the rice first and just heat everything together in the oven.

Sausage and Spinach Soup

Reviewed: Apr. 12, 2011
I used veggie broth instead of chicken, added chopped celery, and cooked everything in the crock pot (cut up the sausage at the end). Also added cooked pasta right before serving. I followed a previous reviewer's suggestion of baby spinach in the bowl instead of cooking it with the soup, and that was a FANTASTIC suggestion. Overall a very good soup, and we will make it again.

Monte Cristo Sandwiches

Reviewed: Sep. 19, 2007
This is VERY good - just the right blend of sweet and spicy. I used smoked deli turkey for the meat, and served it with a dusting of powdered sugar. Highly recommended - my husband and son loved it!

Applesauce Bread III

Reviewed: Jan. 10, 2011
Easy to make in the bread machine, as stated. My husband and kids really enjoyed it. Quite dense, without the texture of a sweet bread - kind of in between a yeast bread and a sweet bread. Not my favorite, but I will make it again for my family since they liked it so much.

Fresh Orange Refrigerator Cake

Reviewed: Feb. 5, 2008
I didn't make this into a "cake" with the lady fingers - instead I just made the filling and let it set up in little individual cups. It makes a lovely dessert. Next time I might choose to use a little more sugar - evidently my oranges were a little sour and so the result has a very strong tangy flavor. It is good, but might be better with a bit more sweetener. Overall we liked it a lot and will be making this again!

Butternut Squash Soup

Reviewed: Jan. 10, 2011
As other reviewers have suggested, I only used 1 package of cream cheese. I found it interesting that the soup smelled savory, but actually tasted quite sweet (with a little spicy kick!) Not something I'd do frequently, especially since the kids didn't care for it, but my husband loved it!

Chocolate Zucchini Cake III

Reviewed: Aug. 12, 2008
This is a very good cake, but I did make some changes to the recipe (thanks to previous comments!) I reduced the oil by half, and used 4 cups of shredded zucchini. I also used whole wheat flour, to make it healthier, and it worked just fine. I didn't have nuts or semi-sweet chocolate chips, so I used milk chocolate chips, and I think that was a mistake. They were too sweet - dark chocolate would have been much better. I also think that the sugar could probably be reduced - the cake turned out almost cloyingly sweet and I'm pretty sure that a sugar reduction would fix that. I'll try it next time. Overall, a good recipe that I will try again (with a few more changes!)

This is the same recipe that my mom always used when I was a kid. It was always my favorite, and I requested it for birthday dinners. When I make it now I always wish I could eat the whole pan. :)

The Best Double Chocolate Chip Cookie

Reviewed: Jul. 21, 2011
Great way to satisfy a chocolate craving! I substituted 3 cups of chopped walnuts for the chocolate chips, used butter instead of margarine, sucanat instead of sugar, and whole wheat rather than all-purpose flour. Even with the changes, they turned out beautifully. I will definitely make these again!

Fennel Corn Muffin

Reviewed: Oct. 11, 2010
This was ok but not something I'd repeat. Maybe I just don't like fennel that much! I followed the recipe as written except used regular milk instead of soy and 1/4 cup oil instead of 1/2.
