Edible Inner Tubes

A nice twist on tuna sandwiches, I used lowfat peppercorn ranch, (didn't have creamy Italian available). The breadcrumbs help so that it is not soggy. Will plan on using this recipe for camping in the summer, nice quick and easy recipe.

My daughters who are learning the art of cooking and baking, thought this recipe looked and sounded good. However we were disappointed, just came out looking and tasting very bland.

Blueberry Zucchini Bread

Everyone who has tasted this bread has loved it. I did make a few changes, used 1/2 white flour and 1/2 whole wheat, used 1/2 apple (or pear) sauce and 1/2 oil. Put a strusel on the top and it is well loved. My 1st grader loves to take this to school for her lunch instead of a sandwich. Good and healthy and had been made lots this summer! Thanks for sharing, it has become a favorite that has been shared alot!

Pumpkin Cheesecake II

Made this one for Thanksgiving and it was awesome. I used ginger snaps for the crust, and even though gingersnaps are pretty strong, the crust turned out wonderful, and the cheesecake was delicious. Omitted the pecans in the crust due to a nut allergy in the family, but they were not missed. Thinking about making this again for another holiday dinner. Excellent recipe.

Whole-Wheat Chocolate Chip Cookies

I have a recipe for "Neiman Marcus' oatmeal cookies" and these taste quite similar, but do not take nearly the effort. I made them with 1/4 cup applesauce and 1/2 cup margerine, they turned out okay when they are fresh out of the oven, but became a little hard the next day and needed to be warmed up in the microwave.

Hearty One Pan Breakfast

I have a very similar recipe however it calls for cubed hashbrown potatoes, and I actually use the O'brien version with the pepper and onion in it already (do not use the tomatoes). We have this breakfast almost everytime we go camping in the summer. The kids and my husband love it and it is a great way to start the day.

Low-Fat Blueberry Bran Muffins

I made these for an after school treat for my girls, they were ready to come out of the oven when they got home. My 10 year old saw the recipe and decided right away that she would not like them. My 7 year old could not wait to try them. The verdict is that piping hot out of the oven, they are fantastic(comment from the picky 10 year old.) I doubled the vanilla and the blueberries and made a strusel topping with 1/4c. oats, 1/4c. flour, and 1tbsp margerine to put on top just prior to baking. Thanks for a great tasting and healthy recipe.

Whole Wheat Pancakes

Not bad for the amount of fibre there is in the recipe. Made them with applesauce instead of butter, and oatmeal instead of wheat germ. They were actually quite good. The family said I could make them again. Played with the batter a little because it was really thin,(used only 1 3/4 cup milk). The thinner the batter, the lighter the pancake. The thicker batter actually made real heavy pancakes. Will make these again as they are easy to make.

Country Breakfast Casserole

My kids are my best critics, even my 10 year old who doesn't like eggs. Her plate was empty,(I did use eggbeaters). Made this one for overnight guests and had limited time in the morning so I was a little leary of make it the morning of. I cooked the sausage the night before and had everything else ready. Cooked in a 9x13 so it would cook in time. It was a hit and the kids all said it deserves 5 stars.

Apple-Raisin French Toast Casserole

Casserole was just so-so, it was very sweet and I used only 1/2 of the sugar as recommended by other users. It was good with cinnamon raisin bread, but that did not affect the sweetness, the apples just didn't cut it. Will likely not make again real soon. Have had better recipes.

Sand Art Brownies

I made these brownies for gifts for Christmas. The girl I made them with her husband said they were the best brownies he had ever tasted. I did follow others advice and used 1/3 cup oil and 2 eggs and 2 tbsp water. This has become my brownie recipe of choice. Just double the recipe and make a 9x13 pan. A tasty variation, omit the nuts and substitue the vanilla chips with peanut butter ones, then once they come out of the oven, put Reese mini cups on top. Very tasty combination.

Sassy Steak Marinade and Sauce

Used this marinade for steak that we had with some friends, it was a great hit. Made a double recipe and cooked the mushrooms in fresh sauce instead of reserving the extra, always a little nervous saving my marinade that has had uncooked meat in it. It was a great hit and will do it again.

Tangy Slow Cooker Pork Roast

Excellent recipe!! My fussy 7 year old who detests onions actually tried a piece and then actually ate a whole slice. The are so sweet. The meat was really tender and very tasty. I poked the meat with a fork before I poured the marinade over the roast. Periodically I did the same and extended the cook time. Thanks for sharing this find.

Homemade Potato Soup
