Kerry's Beany Salad

Awesome salad! Made the following changes: to the dressing, I added 2 T white sugar, 1 T each lemon and lime juice, 1/2 T Cumin, and some Chipotle hot sauce. To the salad, I used all hulled barley (no rice), 1 sweet onion instead of green, doubled the corn (used frozen), and omitted the lettuce. I also added some garbonzo beans, chopped cucumber, a yellow bell pepper, and some tomatoes. Also followed other reviews about the dressing ingredients ratios. The addition of Chipotle sauce and Cumin give this salad a fantastic smoky taste with a kick! Terrific salad...will definitely make again!

Harvest Salad

Awesome salad! Here are my substitutions: pistachio nuts (instead of walnuts, and no need to toast!), gorgonzola cheese (instead of bleu), no tomatoes or ovacado (weird), shallots (instead of red onion), and DEFINITELY add either fresh sliced strawberries or fresh raspberries! Yummmmmmmmm! Be sure to add the dressing just before serving though, as it goes soggy fairly quickly. This is NOT a good leftover salad if the dressing has been poured onto it! Of course, we tend to not have too much of this left over!

Fajita Marinade I

Fabulous! I subbed apple juice for the water to give a bit of sweetness, and cut back on the cayenne so the kids would eat it. I halved the olive oil as others suggested, and added cumin and some Kirkland brand (Costco) Sweet Mesquite seasoning. They were the best we've ever had by far!

Simple Artichoke Dip

Cilantro-Lime Dressing

Fantastic dressing! Used 1/4 cup honey as suggested by others. Here's the salad I made with it: Romaine lettuce, cherry tomatoes, corn, black beans, shelled edamame, sliced red and yellow baby bell peppers, sliced olives, shredded cheddar cheese, and crushed baked tortilla chips. I also added just a bit of some Southwest Chipotle dressing to give it a little kick. YUM!

Napa Cabbage Salad

I use Oriental flavor ramen noodles, and add a little of the flavoring packet into the crunchies mixture. I also add some chicken (or in my case, vegetarian chicken), cooked with the remainder of the seasoning. I usually cook the noodles/crunchies in a frying pan on the stove. We like to add sliced water chestnuts for extra crunch (without fat!), and some cilantro to the salad. A little sesame oil in the dressing is great, and canned mandarin oranges are also a fantastic addition to the salad!

Black Bean, Corn, and Tomato Salad with Feta Cheese

YUM! I did cut WAY back on the oil...probably to 1/4 cup or so. Added a little honey to sweeten up the dressing a bit. I used fat free feta. I left the jalapeno to be added on the side for individual tastes, and added cilantro as an option (that MADE the salad, as far as I'm concerned!) Definitely a keeper!

Caprese Salad with Balsamic Reduction

Oooooh that was good! Be sure to buy good quality tomatoes from a local Farmer's Market if possible. Quality makes all the difference! I accidentally used 1/3 cup honey, but it was fantastic anyway!

Heavenly Angel Food Cake

OMG! Fantastic as-is! Angel food has always been my favorite, and this recipe is IT! Frosted with "Whipped Cream Cream Cheese Frosting" from this site, that I halved the sugar on, and added 2 oz bakers white chocolate!

Sloppy Joes II

These are SO much better than a pre-packaged mix! Sometimes I add a few tablespoons of barbecue sauce, or a few drops of liquid smoke. I make two versions; one with ground beef, and the other with Boca for the vegetarians in the house. Yum!

Smokin' Jack BBQ Sauce

Made mostly as-is and this is CRAZY good! Used a bit more chipotle peppers for some heat. I've made this 2 ways; 1 using the whiskey, and 1 using 1/2 cup apple juice poured in after it's done cooking. I think we actually liked the juice one better, but they're both fantastic! I simmered the sauce for probably about an hour, and it thickened up well. Important note: 1/2 recipe makes PLENTY!
