Classic BOCA® Chili

Awesome chili! Thank goodness for Boca! I use it for everything. For this recipe I also added some really great roasted red pepper marinara, a few sundried tomatoes, taco sauce, frozen corn, and just a dash of Wright's Hickory Seasoning Liquid Smoke. This was better than any real-beef chili I ever had when I ate meat!

Kerry's Beany Salad

Awesome salad! Made the following changes: to the dressing, I added 2 T white sugar, 1 T each lemon and lime juice, 1/2 T Cumin, and some Chipotle hot sauce. To the salad, I used all hulled barley (no rice), 1 sweet onion instead of green, doubled the corn (used frozen), and omitted the lettuce. I also added some garbonzo beans, chopped cucumber, a yellow bell pepper, and some tomatoes. Also followed other reviews about the dressing ingredients ratios. The addition of Chipotle sauce and Cumin give this salad a fantastic smoky taste with a kick! Terrific salad...will definitely make again!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Funny...ribs being rated by a devout vegetarian! While I did not partake in the ribs, the sauce was FABULOUS, and all my carniverous family and friends at our party gave them an enthusiastic two (sauce-covered) thumbs up!

Slow Cooker Homemade Beans

FANTASTIC! I omitted the bacon, added a few tablespoons of real maple syrup (cut back a bit on the brown sugar), and a few drops of smoke flavoring. I'm going to make this recipe for a party this weekend! Loved it! I have heard that Napa Cabbage is good in baked beans...I think this is a great recipe to give it a shot!

Stuffed Cabbage Rolls

I like to add shredded cheddar cheese and sage to the meat mixture, and instead of soup I use canned tomato juice. Fantastic!

Coconut Gumdrop Cookies

Butter flavored shortening works best. My family has been making these for 30 years, but have never added nuts (kids prefer without!). We always at least double the amount of gumdrops it calls for. Cut the gumdrops into quarters using kitchen scissors dipped in water, then toss the cut pieces into granulated sugar to re-coat. Be sure to weed out the black gumdrops! These are very festive and a must-have for Christmas!

Refried Beans Without the Refry

YUM! I kept the onion in the beans after they were done cooking, and ran the entire thing through my food processor along with some N/F sour cream and a bit of the homemade taco seasoning from this website. My son made some baked tortilla chips (also a recipe from this site) and we've been dipping away! FANTASTIC!

Fajita Marinade I

Fabulous! I subbed apple juice for the water to give a bit of sweetness, and cut back on the cayenne so the kids would eat it. I halved the olive oil as others suggested, and added cumin and some Kirkland brand (Costco) Sweet Mesquite seasoning. They were the best we've ever had by far!

Corrigan's Minestrone

Fantastic! I used only 2 potatoes. Used an 8 oz box of macaroni noodles, and added 14 oz can diced basil and oregano tomatoes. Also used Better than Bouillon veggie bouillon (from a jar) instead of canned broth. Added fresh parsley, and served with Parmesan cheese. Made Focaccia bread to go with it. YUM!

Pasta e Fagioli III

Awesome soup! I don't eat meat, but my husband and kids said this was great. My husband said he'd give it 4 3/4 stars. Used leftover Christmas ham. Added some fresh basil and fresh oregano toward the end. Served with "Easiest Focaccia Recipe" bread from this site, and some fresh Parmesan cheese. A big hit with my meat-eating family!

Easiest Focaccia Recipe

Good bread! I added 2 tsp salt, 1 tsp garlic powder, and 2 Tbsp olive oil to the dough. After rolling out the dough (to about 1/2"), I added about 2 Tbsp fresh minced garlic and 3 Tbsp shredded Parmesan to the top before baking.

California Grilled Veggie Sandwich

FANTASTIC! Served on "Easiest Focaccia Bread" recipe from this site (with added parmesan). In addition to the feta, sliced smoked gruyere was melted onto the bread. Added sliced Portabello mushrooms to the grilled veggies. Served the sandwiches buffet-style, so the kids could pick what veggies they liked. I added sliced tomatoes, capers, black olives and kalamata olives to the options. A little balsamic vinaigrette over the top of the veggies made it out of this world! I will be making these again and again!
