Whipped Cream Cream Cheese Frosting

YUM!!! I halved the sugar and added 2 oz melted baker's white chocolate. I frosted the "Heavenly Angel Food Cake" recipe from this site with it, and served with fresh sliced strawberries for my little girl's birthday. This is my new favorite frosting! THANK YOU!

Heavenly Angel Food Cake

OMG! Fantastic as-is! Angel food has always been my favorite, and this recipe is IT! Frosted with "Whipped Cream Cream Cheese Frosting" from this site, that I halved the sugar on, and added 2 oz bakers white chocolate!

Lentil Soup

Great soup! I added about 3-4 Tbsp cumin, which absolutely MADE the soup! I also pureed about 1/2 of the soup in my food processor and returned it to the pot, which made the soup much more creamy. I left out the spinach on this round, but will probably add it next time. We added some sour cream individually at the dinner table, and my kids ate it up! Make sure to get enough salt added too. Oh, and I only used about 2 Tbsp oil. Yum!

Whole Wheat Chocolate Banana Bread

This is great bread! I subbed honey for the sugar and left out the nutmeg and cinnamon (they sound like weird combos with banana and chocolate!). I only baked a loaf for 45 minutes and it was perfect. Husband and 3 kids absolutely devoured it! My 5 year old was thrilled that he got "chocolate bread" for breakfast!

Black Bean, Corn, and Tomato Salad with Feta Cheese

YUM! I did cut WAY back on the oil...probably to 1/4 cup or so. Added a little honey to sweeten up the dressing a bit. I used fat free feta. I left the jalapeno to be added on the side for individual tastes, and added cilantro as an option (that MADE the salad, as far as I'm concerned!) Definitely a keeper!

BBQ Chicken Pizza

My husband says this is the best pizza I've ever made! I only used 1 chicken breast (and it was plenty!). I added 3 strips of cooked bacon (chopped up), and I carmelized the onions in a frying pan before adding them to the pizza. Sweet Baby Ray's Honey Chipotle bbq sauce has just the right amount of heat. I used a shredded 4 cheese Italian mix. I buttered the whole crust, slathered in minced garlic, and baked for a few minutes before adding the toppings. YUM!

Billy's Favorite Smoky Collard Greens

These were good, although I probably won't make them more often than once a year on New Year's Day! Added 1/2 tsp Creole seasoning, 1 can diced tomatoes (with juice), and 2 Tbsp cider vinegar. Served over brown rice with a recipe for vegetarian black-eyed peas. Thanks!

Baked Tofu Bites

These were ok. Decent flavor. To get all the water out of the tofu, I put it on a plate with layers of paper towels above and below the tofu. I then place another plate on top, with a 28-oz can from my pantry set on top to weigh it down. I usually set it in the frig overnight for maximum drainage, and change out the paper towels as they soak up the water. Anyway, the tofu bites were good, but not great. I think just soaking them in BBQ sauce would achieve the same thing.

Greek Pizza with Spinach, Feta and Olives

Great pizza! Wish I could give it 4 1/2 stars. I loved the mayo sauce. Made a slightly tangy, sweet sauce. I used the Whole Wheat pizza dough recipe from this site. I carmelized a sweet onion in a frying pan to use instead of raw onion. Used fresh oregano (which I love), but in this case I feel oregano just doesn't belong (on pizza? Go figure!). I'll definitely leave it out next time. Added shredded mozzarella and a bit of parmesan. Might add toasted pine nuts next time, or a sprinkling of a smoked gruyere cheese. YUM!

Whole Wheat and Honey Pizza Dough

I am so grateful for a WW recipe! The addition of wheat germ is great. The flavor was wonderful, but the dough was a little dense. I'll roll it out thinner next time. Doubled the recipe and froze 1/2 for later use. Added 2 additional Tbsp honey, and 2 tsp garlic powder to the dough (keep in mind the recipe was doubled!). Spread it on a baking sheet lightly sprinkled with corn meal so the dough didn't stick. I think I'll experiment next time, adding parmesan and maybe some fresh rosemary or oregano.

Apricot Brown Sugar Ham

WOW! This smelled fantastic! As a vegetarian, I didn't eat it, but sure was tempted to convert to meat-eater! ;-) My husband and kids LOVED it! After it was cooked, I drained the juices from the pan, combined with cornstarch in a pan and cooked on the stove for 15 min or so to thicken into a dipping sauce. Everybody loved it! And it was SO simple.

California Grilled Veggie Sandwich

FANTASTIC! Served on "Easiest Focaccia Bread" recipe from this site (with added parmesan). In addition to the feta, sliced smoked gruyere was melted onto the bread. Added sliced Portabello mushrooms to the grilled veggies. Served the sandwiches buffet-style, so the kids could pick what veggies they liked. I added sliced tomatoes, capers, black olives and kalamata olives to the options. A little balsamic vinaigrette over the top of the veggies made it out of this world! I will be making these again and again!

Easiest Focaccia Recipe

Good bread! I added 2 tsp salt, 1 tsp garlic powder, and 2 Tbsp olive oil to the dough. After rolling out the dough (to about 1/2"), I added about 2 Tbsp fresh minced garlic and 3 Tbsp shredded Parmesan to the top before baking.

Pasta e Fagioli III

Awesome soup! I don't eat meat, but my husband and kids said this was great. My husband said he'd give it 4 3/4 stars. Used leftover Christmas ham. Added some fresh basil and fresh oregano toward the end. Served with "Easiest Focaccia Recipe" bread from this site, and some fresh Parmesan cheese. A big hit with my meat-eating family!

Corrigan's Minestrone

Fantastic! I used only 2 potatoes. Used an 8 oz box of macaroni noodles, and added 14 oz can diced basil and oregano tomatoes. Also used Better than Bouillon veggie bouillon (from a jar) instead of canned broth. Added fresh parsley, and served with Parmesan cheese. Made Focaccia bread to go with it. YUM!
