Dumpling Soup

I agree with Texanchef, it's better if the dumpling dough is sticky. It makes the dumplings lighter and moister, kind of like a spaetzle. This soup reminds me of the German potato dumpling soup my grandma used to make. The key to a really good soup is salt and pepper. If you have fresh cracked pepper it's even better. I made this for Christmas Eve. I put some cheddar cheese and green onions out for garnish. My family really raved about it. I will definitely make it again.

Harvest Pumpkin Cupcakes

I was so afraid that these were going to be dense like a muffin, but they were light and fluffy like a cupcake. It has pretty intense spice flavor. I was was also kind of worried about the addition of corn starch. I have never used it in baking before, but whatever the reason for it, it was great. I did the recipe as is. It made about 28 regular sized cupcakes and the baking time was 25 minutes at 350.

Creamy Rice Pudding

This is my go-to recipe for rice pudding. It has never NOT turned out. I have made it exactly as written and it turns out delicious. I have also tweaked it a little. We use fat-free milk at our house, so that is what I have on hand. It can make the pudding a bit anemic and not set up as much as I like(but still great). I started using half fat-free milk and half evaporated milk. It definitely gives it a smoother, richer texture and taste. Before I tried this recipe, I tried about 10 different rice pudding recipes. This is fool-proof and I will never have to try another rice pudding recipe again.

Bodacious Broccoli Salad

This recipe is perfect for a low-carb salad, just substitute slenda for the sugar. It's a nice change from the sunflower seeds and raisin type of broccoli salad.

Downeast Maine Pumpkin Bread

This was the best pumpkin bread ever. I followed the recipe exactly. It did take a bit longer to bake but that could be my oven. I topped with decorative sugar. It was not only pretty and sparkly, but it gave it a real nice crunch.

A Very Popular BBQ Sauce

This is pretty darn tasty. I used 3/4 cup of splenda instead the brown sugar and used reduced sugar ketchup for a low-carb version(lower than most recipes). It was sooo good. It's exactly the kind of bbq sauce I like, sweet and zesty. I also added a little liquid smoke and omitted the water, just because I like my sauce a little thicker.

Chantal's New York Cheesecake

I was really a little freaked out about trying this recipe. The reviews were so good that I was a little intimidated. It turned out really good. My crust was a little soggy though. It certainly wasn't because I got water in it, I wrapped my pan with two layers of aluminum foil and used a crockpot bag to keep airtight. There was no evidence of water leaking in. I followed the recipe to a tee, except I only used 2 tablespoons of flour. I was a tad bit nervous about adding the flour, it didn't mix in well and seemed to be lumpy but it turned out beautiful. No cracks at all and there was no browning. I cooked for exactly 1 hour, then turned off the oven and left it in the oven without opening for 2 hours. The texture was smooth and creamy like a true New York cheesecake. I made a strawberry sauce by cutting up a pint of fresh strawberries and 1/3 cup sugar. I cooked on medium heat until thickened, about 5 minutes. It was yummy.

Pistachio Mini Loaves

I also added extra pudding. I added only 1/2 of a box extra. The batter was very thick so I added a little milk to make it pourable. It was delicious. Like other reviewers, I thought it was more cake-like than most quick breads, but yummy none the less. It is perfect for a Christmas giveaway

Apple Cake III

YUMMY!!! This cake was so good. I typically don't give too many recipes 5 stars. But this one was a home run. It was super easy, so easy that I was sceptical. I used cherry pie filling because that is all that I had. It was so moist and the streusel was crunchy and buttery (I used about 3 tablespoons). Since I was using cherry pie filling, I used slivered almonds in the topping. I think it was a great choice. I would recommend this recipe to anyone who wants a tasty and super easy fruit coffee cake.

Wonderful Banana Cake

I get so excited when I see ripe bananas at the grocery store, because I know that I get to make this cake. I have made it probably about 20 times in the last 2 years. I make it according to the recipe without exeption and it turns out perfect every time. I put it in an unheated oven and bake according to directions. There is a gal that I work with that pays me to make this cake for her. She pays me very well. Everyone loves it. My mom now has me make it on her birthday. I use the cream cheese frosting from this site and sprinkle the top with walnuts. It is so moist and delicious.

Basic Cream Cheese Frosting

I've made this frosting many times. People comment on it every time, saying it's the best cream cheese frosting they have ever tasted. I don't get how people claim it's too sweet. Frosting is supposed to be sweet.
