Black Beans and Rice

Thanks for the much needed new idea for a side dish. I made it with 1 can of drained kidney beans, but otherwise followed the recipe and it was delicious. The cumin gave it a really nice flavour.

Chef John's Swedish Meatballs

I've kinda winged Swedish meatballs for a while now, but this recipe really refined what I was doing. Totally awesome. I changed things ever so slightly - mixed the breadcrumbs with the milk ahead of time because that worked so well in the Italian meatballs. And I did not start the sauce until the meatballs were in the oven - in fact, sauce and meatballs finished at just the same time. Not buying frozen meatballs ever again!

Chef John's Baked Eggs

This was wonderful. I did a double batch in a 7 x 11 dish - it took a bit longer to cook, but thanks to the video, I knew how it should look when it was done. I scooped the eggs out of the dish and onto toast. A bit messy, but the flavour was awesome. Also very rich and filling.

Chef John's Italian Meatballs

My new go-to recipe for meatballs! They were so moist and tasty. I altered the recipe slightly - not because I wanted to, but I bought 1 lb of extra lean ground beef BEFORE I looked up the recipe. So I halved the recipe and added a drizzle of olive oil to the meat mix just to make sure it was moist enough. Also, did not have time to chill meat mix for an hour and it still worked out fine! I'll plan ahead better for next time. Thanks, Chef John!

Homemade Taco Seasoning Mix

This had just the right Tex-Mex flavour. And it is nice to be able to control the salt, and adjust the heat up or down according who we're serving. My hubby and I like it hot, bot not all our friends do. I'm sure not buying the commercial stuff anymore!

Authentic Pad Thai

I really enjoyed this and so did hubby. I had to improvise with the tamarind paste - could not find any - the closest was a tamarind-date sauce - that worked fine. The flavour of the pad thai was great, but it wouldn't hurt to have more sauce - I might try doubling it next time. I also omitted the second amount of sugar. And I found this dish tasted particularly good the next day.

Jam Thumbprints

I tried this recipe because I lost my Mom's original, and this seemed closest. I made them smaller, and baked a bit less - and after the first 5 minutes, pulled them out and recreated the indentation with the end of a wooden spoon. some of them melted and looked a mess. HOWEVER, when it was all baked (I fill them right after they come out of the oven - apple jelly and mint jelly for Christmas), and I tried one of the melted ones - better than Mom's recipe (Sorry, Mom). The other thing I changed (I know, shame on me) was I used brown sugar - only because the recipe I was trying to duplicate used brown sugar. Worked out pretty good!

'Chinese Buffet' Green Beans

This made a lovely side dish at Thanksgiving. I also added some slivered blanched almonds - because I had them on hand, and it seemed like a good idea. What I really like is that I was able to cook them up and keep them warm while we served the salad course, and they did not go limp or soggy.

Pinwheel Italian Calzones

This is a great quick snack - or serve with a salad and make a meal of it. I meant to use 2 tubes of cresent roll dough, but discovered I only had 1, so I just jammed all the filling on the 4 rectangles. It worked fine. The only deviation I made from the recipe is that I baked them before cutting up and increased the baking time about 7 minutes.

Swiss Sherry Chicken

This was such a lovely, simple recipe - great for weeknights - yet the flavor was quite sophisticated. I think it was the sherry that elevated it from an ordinary mushroom soup casserole. I only changed a few things - added a dash of worchestershire sauce, and I used dried parsley instead of dill - I'm not a dill fan. I might add more cheese next time, and maybe some sliced mushrooms and green onions to round it out. But really, it was fine just as is.

Chicken Yakisoba

This was Delish! I took the advice I read from one of the reviewers and reduced the sesame oil to 1 tsp, and found that gave it plenty of sesame flavour. Also, I did not find yakisoba noodles, so I used half a package of rice vermicelli - that worked well. I also love how quickly and easily this dish comes together. Definitely going to be making this often.

Delicious Ham and Potato Soup

Great soup. I used ready made low sodium broth instead of the powder. And instead of making a separate white sauce to thicken the soup with, I whisked the flour in with some of the milk and poured that straight into the broth. That work well, and saved adding more fat.

Gourmet Mushroom Risotto

This was absolutely wonderful. I followed the recipe pretty much to the T and loved it. It is very rich, thanks to all the mushrooms. Makes a lovely side, and is totally becoming a regular around here.

Cheesy Beef 'n' Rice

This came out quite good, and it was so fragrant while cooking, but I think I might add more basil, garlic and cheese next time. I cooked a chopped onion with the ground beef instead of using dried onion, and because many reviewers had great luck with green pepper, I also chopped some into the ground beef. I'm definitely adding this to my weeknight repertoilre!

Slow Cooker Lasagna

as per other reviewers' advice, I did double the sauce. Otherwise, I pretty much followed the recipe, and loved it. And for me, it was a great solution. My oven is on the blink right now. I will likely make this again since it's nice to do all the preparation early in the day and, therefore, get all the clean up done early.
