Black Bean Brownies

Red Chard and Caramelized Onions

This is now my favorite side dish ever! Since the greens have such a strong flavor, the smokiness of the olives and the acidity of the lemon were perfect! My husband and I ate it all in one sitting - but hey, it's greenery, you just can't feel bad about it! Thanks!!

Busy Day Lunch Salad

Yummiest. Salad. Ever. I have made it several times now since last summer. I do love it with the shredded mozz, but I think cubed cheese (I like swiss) doesn't get mushy as easily. Truly delicious - the name doesn't do it justice. Even my 19-month-old gobbled it up (except she left the onions behind ;-) The thyme/olive oil/lemon juice combo is just phenomenal!

Easy Chocolate Tofu Pie

Yum! I used my kitchen aid which didn't quite smooth out the tofu, but the flavor is awesome! Will definitely try again with a blender.

Hash Brown Egg Bake

Good base recipe, but very tasteless without something else added. Will try green onions, maybe a bit of sour cream next time. Maybe shredded hash browns would also make the potato a bit less overwhelming.

Butternut Squash, Apple, Onion Au Gratin

It sounds a bit odd, but it was SO good! The only change I made was to increase the bacon (and when is that ever bad?!) to make it more of a main dish. Sweet and savory, and made from all root cellared items....couldn't be better!

Potato and Vegetable Frittata

Fantastic recipe! Does take longer than stated, but all the chopping is worth it! I used my electric griddle for the whole cooking process and it worked great! No crispy brown on top from the broiler, but I didn't think it needed it. I added swiss chard and omitted the olives, but other than that, stuck to the recipe. This one goes in the "keeper" binder!
