Pumpkin Muffins II

This recipe yielded muffins with a perfect consistency! I followed as written, but used a whole can of pumpkin (15 0z) vs. the fresh pumpkin. The reciped made 12 large muffins--I used a muffin tin w/ paper liners. I thought the blend/amount of spices perfect. Thanks!

Polly Welby's Excellent Chocolate Mousse

This just didn't turn out for me. I doubled the quantity to make 8 servings, followed the recipe to a T, and ended up with a bitter product with the consistency of spackle. Even my 8 yr. old who loves mousse delcared it "not good." I used expensive Ghiradelli chocolate. Sorry!

My Best Clam Chowder

This was simply scrumptious! I doubled to 16 servings for a family Christmas dinner and it made a crockpot full plus another generous 4-6 servings. I left out carrots, used bottled clam juice w/ juice from clams to cook veg instead of water. I added approximately 3T cajun seasoning and 4t tabasco sauce to add some flavor and heat. A keeper--thanks!

Grilled Marinated Shrimp

Sooo good! Made for Mother's Day lunch. We used frozen shrimp and it made them taste so fresh--no fishy or strong shrimp flavor. Everyone loved it. Thanks for a great recipe!

Spinach Pasta Salad

This was great! I made as listed with the exception of using one recipe of "homemade" Italian sald dressing--such as Good Seasons with the packets instead of just one cup, and I used 10 oz spinach. So fresh tasting and yummy! Great for a change from heavy mayo based pasta salads. Thanks!

Jalapeno Popper Spread

This was very good. I made it as listed, but added 1 C mozzarella cheese and seasoned bread crumbs on top. I baked this. It got all eaten up at a Mother's Day lunch. Thanks!

Creme Brulee

This is the first creme brulee recipe that has actually worked for me! Used ingredients exactly as listed, but followed instructions of other reviewers and skipped double boiler step. I cooked in one big baking dish at 375 degress in hot water bath for about 45 minutes and it was perfect. The combination of brown and white sugar for the topping was good! The only reason for not giving a five stars was I thought it could have a more intense vanilla taste. Maybe using a vanilla bean pod would produce that as in some other recipes I've tried. Thank you for a recipe that actually made a custard--and not a runny mess!

Chicken Dumpling Strips

Really, really good and easier than it may seem! We are vegetarians so I used veg bouillon cubes and a bag of Morningstar Farms MealStarters "chiken" strips. I doubled recipe and used 3 bouillon cubes to make 6 C broth, then added 4 additional cups water. Don't skip the poultry seasoning--it adds a great taste to the dumplings. Similar to the chicken and dumplings my Mom used to make! Thanks Gay!

Jamie's Minestrone

This is such a great recipe! I made as if with the exception of: I added 4 cups of broth instead of 2 cups broth & 2 cups water. (I made the broth with vegetarian bouillon cubes.) Also I added 1 pkg. of Boca Crumbles (fake hamburger) to add protein. I used 1 1/2 teaspoons dried basil instead of fresh. The flavor of this is unbelieveable--I say it rivals that in restaurants! Thanks so much Jamie!

Special Banana Bread

Great recipe! I followed the recipe as stated with the exception of substituting 1/2 teaspoon allspice for the nutmeg. (I was out of nutmeg.) I love the consistency of this cake. I do suggest mashing the bananas very well. If you like a lot of spice, this is the cake for you. Thanks Candace!

Chocolate Mousse and Raspberries

This is excellent! I followed the recipe as is with the exception of using semi-sweet chocolate. I liked that this recipe didn't use raw eggs, and it seemed easier than other recipes. I topped the individual serving with whipped cream and chocolate chips. So yummy!

Basil Pesto Bread

So easy! I do suggest toasting the bread on both sides before adding the pesto. I used bottled pesto and provolone cheese. I think that sundried tomatoes or even canned tomatoes would be good as well. I used fresh Roma. This was a favorite at a recent party which I found ironic as it was the quickest and easiest! Several people wanted the "recipe". The combination of pesto, tomato and cheese is a sure winner. Thanks for a great recipe.

Spinach Salad with Pepper Jelly Dressing

I did not care for the pepper jelly dressing as it's listed; it was far too sweet. I used red pepper jelly and the rest of the dressing ingredients as listed, but I added balsamic and white wine vinegars and more mustard. I substitued pecans for walnuts and added fresh red pepper sliced.

Dip For The Stars

This is just wonderful! The photo doesn't look at all like what it looks like--gorgeous red tomatoes atop layers of white, green and red. So great for Christmas! This is very rich. I didn't think that it would make a lot, but it really goes a long way. Will make again at the Holidays.

Shrimp Creole IV

This had great flavor and was easier than I ever imagined. I added 2 teaspoons salt and 2 teaspoons Tabasco. Also, I messed up and added the green onions in with the other onions, but it was good. I used a vegetarian bouillon cube instead of making the shrimp stock. I would make again! We're thinking of serving this over linguine, orzo or risotto next time instead of rice. *I did not use bacon fat. I substituted olive oil. We used the leftover over linguine and baked it with feta cheese and mozzarella. Yum!

Hot Crab Dip

This was good. I used canned claw meat, but lump or backfin would be better. I served this with garlic melba toasts, but I really think chips (corn, tortilla) would be much better--the salt would set off the dip in a way the toasts did not. Good consistency.

Chocolate Frosting I

This is our favorite chocolate frosting recipe! I also personally like it as it calls for cocoa powder and not baking chocolate squares. This recipe makes a very chocolately, rich, spreadable frosting. We love it on homemade yellow or white cake.

Amazing Pecan Coffee Cake
