About this Cook
I am a 30 something mom that comes from a line of GREAT cooks! I enjoy cooking, but on many occasions have to make it quick with 2 kids and activities going on. I pretty picky, so I normally try to sign up for my favorite dishes when attending get togethers! :)
My favorite things to cook
Thanksgiving dinner!
My favorite family cooking traditions
Beef enchalada's or Chili Verde are my two favorite recipes my mom passed down to me.
My cooking triumphs
My first Thanksgiving! It was a hit! Everything turned out perfect and couldn't have been better.
My cooking tragedies
Always follow recipes to a T, especially when baking breads, cake, pies, etc. unless you have a touch of something you feel will make the recipe better! My Southern Living cookbook that I received for a wedding gift (15yrs. ago) is well used and has never steered me wrong!

Tex-Mex Lasagna
This was a great recipe starter for what i was aiming for. I too changed it up a bit using about twice the beef. I also eliminated the cottage cheese. Toward the end of baking I added more cheese & crumbled tortilla chips on top. We topped it when serving each plate with choices of sour cream, tomatoes, lettuce, onion, guacamole & fresh chopped Jalepenos. Everyone in the family loved it!

Arkansas Sin
I'd like to add to this recipe, as I forgot to add the sour cream to the original!! Please feel free to add 8oz of sour cream for an even yummier experience!!! You can also add another jalapeno if you want it spicier!

Chili Mac Casserole
This was a great recipe! We wanted to make dinner with ingredients we already had vs. going to the store. I probably doubled the seasoning & added a touch of garlic salt and garlic powder. I also added about a tablespoon of Williams Chili Seasoning. Very yummy. Definitely a repeat at our house!
