Lemon Cream Pasta with Chicken

This was a good one. I ended up cutting the chicken into bite size pieces and mixing it in with the pasta. I also threw in some baby spinich and that was a nice touch. Overall, I liked this one. The kids liked it too.

Carne Con Papas

Very good recipie and done the traditional way. If you are in a spanish community, you can use "Cooking Wine" instead of white. You can also make this in a dutch oven and just cook about an hour or two. It pretty much like beef stew. Like in any other culture, there is usually very few measurements in cooking Cuban food, we ususally eyeball it. Also, if you like, you can add green olives and bay leaves.

Broccoli Chicken Divan

This was a good recipe. I only had cream of chicken condensed soup so thats what I used and it came out wonderful. I hate vegetables, but I've been trying to eat more and more of them so this is one dish that I'll be trying again...

Cuban Black Beans II

These beans were tasty, but definately not "Cuban". No bonafide Cuban would ever put tomato sauce/paste in their beans. I added a large bay leaf, some cumin, used red wine vinegar instead of white vinegar and added about a tablespoon of sugar and of course, NO TOMATO paste.

Stuffed Mushrooms II

I don't eat mushrooms, but I made this recipe for my husband and brother in law and they loved them. Next time I will try adding more garlic and a little less bread crumbs, especially for the topping. I would suggest a good mix of garlic, cheese and bread crumbs for topping.

Easy Meatloaf

This meatloaf is delicious, easy & quick to make. The sauce makes it a little sweet. Next time I will use half the brown sugar the recipe calls for.
