Pancakes I

5 stars with a quick modification. use 2 tbls melted butter instead of oil, 1/2 cup buttermilk and 1/2 cup regular milk, and grease the griddle or pan with butter. Make sure the batter rests for at least 30 minutes. YUM!!!!! Fat is flavor!

Jamie's Minestrone

YUM!!! changed servings to 8. only used 1 1/2 onions, and a handful frozen french style greenbeans and pink beans instead of Kidney. LOVED it and so did my 3 kids. Let it cook a good 45 minutes for full flavor.

Butternut Squash Casserole

Was really good.. but i did alter the original recipe. I wanted to make it as a side dish and instinctively knew that 1 cup of sugar would make it more like a dessert. That being said I used 1/4 cup of sugar (i used sugar in the raw) and only 1 cup of milk (i used unsweetened vanilla almond milk). This cut back on calories and fat. I did not have margarine so i did use butter and I used basic graham crackers 1/4 cup of butter and 1/2 cup of brown sugar for the topping. The end result was more like a custard and worked well as a side dish. It was still sweet, just not overpowering sweet. My kids GOBBLED IT UP!! A testimony to the squash.

Big Soft Ginger Cookies

Fabulous.. Be warned.. if you eat them while they are still warm.. you will get a tummy ache from eating too many. KILLER good warm out of the oven. Almost too good. A massive diet killer and worth every bite!

Oven-Baked Sesame Chicken

So... needed a direction for oven baked chicken (breasts on the bone) and this one was perfect. I didn't have the buttermilk in my fridge (wish i did) so i skipped that step and had to bake for closer to 45 minutes due to not using boneless breasts. The only thing I'd do different is leave it in the oven at 400 for maybe an extra 5 minutes to get it slightly brown on top, then turn down the oven to 350. It was VERY tasty and don't forget to drizzle the extra butter on top.. that part makes it even more yummy.

Fresh Semolina and Egg Pasta

Eileen's Spicy Gingerbread Men

Double the spices... heap the cinnamon... easy on the doubling the cloves and they are really good. If your dough is a little sticky add flour when rolling them out and make sure the cookies are fat so when they are done baking they are chewy inside. Sooo yummy and now a Christmas tradition in our house!

Just cook those onions until they are nice and caramelized. SOOOO good. This bread is awesome fresh out of the oven.. not so great the next day.

Creamy Rice Pudding

wow.. just a touch of cinnamon at the end and voila!!! I had leftover white rice from Chinese take-out. i sat in the fridge and partially dried out so I started at the 1 1/2 cups mixed with 1 1/2 cups milk part. Worked like a charm!

Super Easy Doughnuts

WOW!! I used the recipe conversion and made only a 9 serving recipe and it turned out awesome. We used a 1/4 cup of buttermilk because that is essentially what the milk and vinegar are.. and we used a small cookie scoop and dropped straight into the oil. My 3 year old had a blast rolling them in powdered sugar. oh yeah and once it is converted it calls for a half an egg.. we used egg substitute that I had laying around from my parents visit. lol. Worked like a charm.

Scalloped Potatoes and Onions

Didn't have the mayo and used 3/4 cup of milk and only 1 cup of broth, and used the college inn seasoned broth. Flavor was fab for a usually bland dish. Went over awesome.

Turkey Brine

Apple Sausage Wagon Wheel

We loved this! I doubled it and made it in a 9X13 pan. It has to cook a bit longer but it was worth it. My husband took the whole thing to work and only a little came back, which I was glad because I enjoyed heating it up the next day and so did my 2 year old! It is heavy and sweet.. which I liked.
