Quinoa with Peas

I make this almost every week and I love it. This is what I do...I rinse the quinoa (some kinds you don't need to but the kind I buy you do), I add a teaspoon of coriander and cumin, and I add two cups of peas but not till the last 5 minutes of cook time so that they still have a little crunch. This is an awesome toddler food - my 1 year old loves this. Also - don't substitute the cheese. I've used parmesan just because I had it on hand and the pecorino is a much better flavor. I think I add more than a half a cup (ok, I know do but I tell myself it's there abouts). Wonderful recipe and it keeps in the fridge really well.

Mushroom Sauce

I have never given a bad review since I usually figure it's just a difference in taste buds rather than a bad recipe...having said that, this was gross. The only change I made was to add garlic to my saute. I like all the ingredients in the recipe, and I like the idea of it but it really didn't work. It just tasted like cream of chicken soup with some vege, which makes sense since that is what it is. Oh well, you win some you lose some. Thank you for the idea anyway. Back to the drawing board.

Black Beans and Rice

I'm rating this 5 starts because I want people to try it, but I did not in fact stick to the recipe. I added a can of Rotel, used chicken broth, added corn, and used just a sprinkle of cayenne. This is a fantastic basic recipe though, and I think would be hard to ruin as you experiment.

Slow Cooker Chicken and Dumplings

Comfort food all the way. I followed other reviewers suggestions and added cumin, parsley, poultry seasoning, seasoned salt and pepper. I used one can crm of chicken and one crm of mushroom, and used chicken broth instead of water. I used one package of biscuit dough, and I cooked on high for 6 hours, three of which had the dough in. I'm not sure what I'll add but I want it to have more gravy next time. I steamed some frozen mixed vege to go with - added a little butter and parmesan to the vege, and plates were clean!

Chicken Fried Chicken

Yum. I followed another reviewers advice, and dredged the chicken in flour before using the egg and coating. I baked it in the oven, and added a cup of butter toward the end.

Salsa Chicken Rice Casserole

So I made this because I needed to use some mexican flavored Velveeta and didn't know what to do with it. So I left out the monterey jack, added the velveeta and sprinkled a little cheddar on the top during baking. It was ok, and the calories involved make me a little green but my kids LOVED it - really loved it. So for them I give it 5 stars!!!

Clone of a Cinnabon

I made these without a bread machine and they were still super easy. SO DELISH!! My only advice would be to watch them - I baked for 15 mins but the outside buns were a little crunchy - I like them soft and could have taken them out a few mins sooner. Still good though!!

These are so good! I doubled the recipe and would say I got about 30 - so definitely make more dough. Easy to roll - not sure why so many had a hard time with it. I piped on frosting that I found in the reviews. Yummy. Thanks for the recipe.

Eclairs II

These were fantastic. I followed the advice to prick a hole in the end of the warm eclair to let the steam out...not sure if it made a difference but why not? The filling was too runny for me, so I would like to try again with less milk. I actually don't really like the vanilla filling, but my husband loves it so I made it that way. I piped it in which was nice and easy. Next time I would like to make some and pipe plain whipped cream into it which is the way I grew up eating them. Fantastic easy recipe. Also, I put the 'dough' in a zip lock bag, cut a corner off about the width of the eclairs and then piped them out onto the cookie sheet - SO EASY. Thanks for the recipes!!

Sloppy Joes II

Not one of my favorites, but my family all loved them and my husband is in love. I added some worcestershire sauce - probably about a tablespoon. I've made this twice and the second time doubled the recipe and used 1c. tomato sauce and 1/2c. honey barbeque sauce. I froze the leftovers in muffin cups as suggested by others - one muffin cup is enough for a sandwich. So clever. Thanks!

Hummus III

Love it. I use two cans of beans instead of two cups, add a little extra lemon, eyeball the paprika and add cumin. Also freeze it in muffin cups which is genious so thanks who ever I copied that from.
