Whole Egg Mayonnaise

OMG...this is good! I'm trying to focus on eating less processed foods and making things from scratch so I know what is in them. Making this mayo was soooo easy! They lie about the "Prep Time" and "Ready Time" though. It took me about 30 seconds to "prep" and grab everything I needed, and about 2-3 minutes with the immersion (boat motor) blender to turn this all in to mayo! It got nice and thick and it's really creamy. Delish!

Mexican Corn on the Cob (Elote)

Mmmmmm! This was sooo good! I'm not a fan of eating corn right off the cob, so I boiled the ears first, put them on the grill to get some char marks, and then cut the corn off the cob. I mixed the butter, mayo and some chili powder in a bowl, and then mixed the corn it. I then mixed in some parmesan. I know some people said parmesan wasn't good in it, but I used a high quality grated one and thought it was very good. I was testing out the recipe on my husband for possible use at a bbq this weekend, and this was definitely a winner!

Bean Soup With Kale

I loved this soup! I used a can of diced tomatoes instead of fresh, and it turned out really well. I will definitely make this again.

Easy Vegetable Pot Pie

Soooo easy! One of our guests for Christmas dinner was a vegetarian, so I wanted to make a dish that was substantial, but also easy. With all of the other cooking I had to do, I didn't have a lot of time to make another complicated dish. I made it earlier in the week just to make sure it was acceptable to serve (I hate making my guests be guinea pigs!). I used 1 tsp of thyme, like the recipe called for, and I didn't think it was too much at all. If anything, I think this could you a little more seasoning. I'll have to play around with it more to jazz it up a little. I used cream of celery soup, which I thought went really well. To me, cream of potato or mushroom just didn't sound good. I will definitely hold on to this recipe because it was easy and called for ingredients that are often on hand.

Too Much Chocolate Cake

This was soooo good! It was moist, dense and very chocolately! I served it as a dessert for our Christmas dinner along with a scoop of vanilla ice cream.

Almond Celery Bake

I get organic produce delivered, and don't have a choice in selection. More times than not, we get celery. Up until now, it would just sit in the fridge and wilt. This recipe was sooooo GOOD! And EASY! Contrary to what another reviewer said, I think the almonds are very necessary, they add a nice crunch and texture. This will definitely become a regular recipe!

Slow Cooker Turkey Breast

OH MY GOSH! I've never made a turkey before so I decided I would start small with a turkey breast. Not only was this easy, but the results were over the top. I seriously don't think I've ever had turkey that was so moist before. The meat just fell off the bones. This last week I decided to try to put a whole chicken in the crockpot in order to use it for chicken chili. The results were the same. Mmmmm....

Crab Stuffed Flounder

Mmmmmmm...this was GOOD! As recommended by others, I added Old Bay Seasoning to the crab stuffing. I also made a few other changes. I couldn't find flounder, so I used dory. Also, I added about 2 tablespoons of parmesan. I also reduced the butter to about 1 tablespoon. I did add the mayo/egg topping and thought it was good, but maybe unnecessary. I don't think it added enough to the recipe to justify the extra calories.
