MEATLOAF. I've never had great success making any kind of meatloaf... its normally burnt on the outside and raw on the inside... so I give up

Grilled Bacon Jalapeno Wraps
Wasn't a fan of the cooked jalapeno, but the cheese mixture/bacon combo was a nice surprise. I think I'll make again using raw jalapenos and topped with crumbled bacon. ( I honestly could've eaten the cheese mixture alone-yes, it was that good )

Sweet and Sour Meatballs in Sauce
a tad too sweet for my liking , BUT the family loved them. I made rice for the original meal and meatball subs with the leftovers.

Baked Mushroom Thighs
very simple to make.. simple ingredients. dh loved these and he's not a fan of mushrooms.... I made a couple changes.. I did not save any of the 'soup mixture' after dipping the raw chicken (I used 1/2 a can and tossed the 'used' leftovers and froze the remaining 'unused') I didn't want to push the mushrooms on dh so I didn't using the sauce as a topping, hence didn't use cornstarch. I baked until crispy.
