I am a 26 year old male working in a casual fine dining kitchen. I cater and bartend on the side. I am single with no children and hope to obtain my red seal certification in the next year or so. I love to cook meat main courses with different sauces from the drippings. I also make a killer ceaser salad. I specialize in wild game, such as Caribou and Woodland Bison. Ceaser salad recipe handed down for years. Potlucks and BBQ's are huge too.. Seems like everyone in the family can cook up a storm. Won a gold medal at the NWT/Nunavut Skills Competition. Took me forever to realize that cream sauces seperate if cooked to long! Add cream before serving! Also, carmelize your onions before adding garlic. The garlic will burn before the onions are ready.. took me a while to figure that one out too.
