Red Potato Bites

I had a hecka time trying to get the potato out of the inside. They were flimsy and kept falling apart. I ended up mashing the whole things, adding butter along with all the other ingredients and baking it.

Mock Lobster

Followed this recipe to the T except used boneless thighs instead of breast. I also marinated it overnight. We really liked this. I thought it was going to have an asian taste to it, but it really doesn't. We couldn't really pinpoint the great flavor but both decided we would love to have it again. Served with rice and peas.

Sharese's Spaghetti Salad

This was a nice side dish to take to the potluck. Followed to the T but used red bell pepper instead of green. We also used small shells since that is all we had.

Enchilada Meatballs

These were excellent and a big hit at the superbowl party. I followed other reviews and added about a half packet of taco seasoning to the meat and a half of a diced onion sauteed. Baked in a 9x13 pan for the first 20 minutes to render off most the fat, than transfered them to a nice dish. Topped with homemade enchilada sauce (no tomato sauce) sprinkled with the cheese and put back in the oven for another 5 min. Served with toothpicks. Will definately make these again.

Cinnamon Spice Drop Cookies

I followed the recipe almost to the T. I used butter instead of shortning and since I had not dark brown sugar I used all light, and they turned out excellent. This recipe made 26 large cookies scooped with my ice cream scooper. An excellent fall cookie!

Caramel Apple Cupcakes

I made these for my coworkers and they loved them. I got 24 standard cupcakes from the recipe. After heating the caramel w/ milk I just dipped the cupcakes in the tilted pan until covered, let the excess drip off than dipped them in the chopped pecans (I did have to melt 7 more with 1T milk to finish them). Hard to eat without getting your hands dirty but will definately make again.

English Muffin Hors d'Oeuvres

Sourdough Chipotle Chicken Panini

absolutly loved this sandwich. I probably only used a tablespoon of the dressing, and couldn't find the chipolte chile powder so just did a sprinkle of cayenne. Don't own a panini maker so just fried in a pan with another heavy pan on top to press it down. Will definatly make this again, thanks!

African Peanut Soup

I really enjoyed this soup. I doubled the amount of rice, precooked it, I added it cooked and let is simmer for 20 min at the end. I also added diced cooked chicken, it was thicker like a gumbo. I also used chunky jif pb, doubled the chili powder and used chicken stock instead of veg, since its all I had. I will definately make this again.

Filet Mignon with Rich Balsamic Glaze

We really enjoyed this sauce. I double the sauce and simmered in a pan until it had decreased by half. I also added a heaping T of brown sugar and two garlic cloves. I marinated the steaks in some of the sauce before Bbqing, than poured some over the finished steaks, excellent!

K-Dub's Alfredo Ravioli Bake

We loved this recipe. I am lazy so used the breast meat from a rotisserie chicken cut up instead of raw. I only added about 1 T of the seasoning and about a quarter cup of sauteed onions as well some salt and pep to the meat. I think next time I may add some liquid to the alfredo sauce to make it alot more saucier, just our preference. This was excellent, thanks K-Dub!

Skewered Potatoes

Excellent recipe! I boiled the potatoes until almost tender. Cut in forths and placed in a tupperware bowl with a lid. Made the marinade with stock instead of wine, poured it over potatoes and turned bowl every half hour. I let them marinade for about 3 hours. The marinade got alot thicker on the potatoes. I skewered and bbq'ed until browned on the outside. No need to baste there was plenty on them. I actually unskewered them onto a platter for serving. Sooooo good

Tortellini Bacon Broccoli Salad

This recipe was easy to make and my guests loved it! I did add some diced red onion. I doubled the recipe but only used the one pound of bacon and one pt of the grape tomatoes and it was fine.

Chicken Tikka Masala

I am going to give this 5 stars even if it needed to be changed a bit. First off, I added one teaspoon of salt to each the marinade and the sauce instead of the amount posted. I also sauteed onion in the butter with the jalapeno before adding the other ingredients. And, only added one teaspoon of the cayenne because I thought it would be to hot. We really enjoyed this dish. I will admit I did sprinkle a tad more salt on the finished product. We served with white rice and grilled flour tortillas. Highly recommend.

Donut Muffins

I made these following the recipe except I used butter instead of margarine. I really liked them better the next day. My teenagers didn't care for them at all. I think it was the nutmeg. I was getting bored dipping the tops so I dumped the cooled muffins in a ziplock bag, poured the melted butter in zipped it closed and tossed gently. Than I poured them out into a bowl, poured in the cinnamon and sugar and tossed. they didn't break up at all!
