Glazed Meatloaf I

Meatloaf was very good. My husband enjoyed it a little more than I. The glaze is what makes this different from most meatloaf recipes. I did not double the glaze which was a mistake. It was so good I think next time I will. I did however substitute the 2 pounds of ground beef to 1 lb. grd. beef and 1 lb. grd. pork which makes any meatloaf tastier.

Slow Cooker Salisbury Steak

Gerry's Chicken Enchiladas

Towards the end of preparing these enchiladas I was cursing. It definately takes alot of steps and is very time comsuming. But when my husband, my son and I sat down to eat them, I realized all the work was worth it. Quite delicious! The green onions do not need to be added. I made some with and some without and the consensus was they were better without.

Mexican Chicken Corn Chowder

I've had better chicken/corn chowder soups. This one was a little bland - and I added more bouillon and cumin then the recipe called for. Don't think I would make it again. The taste is not worth the calories.

Southern Style Thanksgiving Green Beans

I made these green beans just this pastThanksgiving. My family gave me a hard time because they did not want to change from the durkee onion green bean cassarole we have every year. But I persisted and I'm glad I did. The beans were very good. The recipe made a large portion. I did add a little seasoning salt and doubled the ham hock.

Chicken Pot Pie VI

First time ever making a pot pie - was very it easy to make. I omitted the mushrooms and substituted the cream of mushroom soup for two cans of cream of chicken instead. Turned out delicious. Will make again for sure!

Mexican Style Shredded Pork

Made this recipe for my Cinco de Mayo party. It was a huge hit with everyone,even my siste-in-law who is Mexican - she suggested that I add a little cumin after I shredded the pork and put it back in the crock pot, which I did (approx. 1 1/2 tsp) It added more taste. This recipe is extremely easy and delicous. A keeper for sure.

Almond-Crusted Tilapia

Very good. Probably because of all the butter and fattening ingredients. But its definately a keeper. Be careful about adding too much salt. I salted mine while it was cooking and it tended to be just a little too salty.

Amy's Barbecue Chicken Salad

Great salad - but made the following changes per other reviews and my own tastes: Seasoned chicken with fajita seasoning prior to grilling. Added sliced red and yellow peppers. Used 3 parts Ranch dressing to one part BBQ sauce. I fried corn tortilla strips in oil and used them as topper instead of the fried onions.

Cornbread Muffins I

So far the best cornbread I have made. This recipe is on the sweet side - so if you don't like your cornbread sweet and moist don't bother. I made it with 1/2 c. sugar and 1/3 c. honey and only a half a can of corn. Next time I'll reduce the sugar to 1/3 c. and add the whole can of corn and it will be perfect.

Country Apple Dumplings

Just as good as everyone suggests. I cut the sugar 1/2 c. white and 1/2 c brown sugar and 1 1/2 sticks butter. Used whatever apples I had available and it turned out excellent. I made everything ahead of time except the soda and put in fridge. Added the Mountain dew right before I put in the stove. I suggest you serve warm with ice cream. YUMMY!!!

Very good - I skipped the butter and added the spice - Tajin, look for it in your local grocery store - it is chili powder with lime. Otherwise I suggest using chili powder.

Too Much Chocolate Cake

Excellent and easy. Followed recipe exactly and came out perfect. Topped it with Satiny Chocolate Glaze as other reviewers did and added fresh raspberries on top of glaze.

Creamy Chipotle Chicken

Awesome! Tasted almost like Voodoo Chicken from the restaurant Heaven on Seven. I did not have a can of Chipotle peppers in adobo sauce, so I substituted 3 tablespoons of Chipotle sauce I had available. Therefore it was not as spicy. Next time I will use the chipotle peppers with adobo sauce and shred the chicken and make enchiladas. A keeper for sure.
