Garlic Broccoli

Reviewed: Dec. 8, 2008
REALLY yummy! I did change this up a bit since I'm not a fan of crunchy broccoli. I substituted balsamic vinegar for red wine vinegar, and blended all the marinade ingredients up in a blender. Then I poured this over the brocolli in a pan and let it steam all together. The end result was a tangy and flavorful broccoli side dish instead of a "salad". This seemed to allow the flavors to meld together better, and tone down the overpowering garlic and vinegar. Sprinkle with parmesan at the end and enjoy!

Sunshine Halibut

Really good! I can see this same sauce being delicious on a variety of fish. Light citrus flavor that didn't overpower the fish but left you wanting more.

Eggnog Cake

Reviewed: Dec. 8, 2008
THIS WAS SPECTACULAR! I needed to make something festive for a Christmas potluck at work, and a cake seemed pretty easy to transport. I chose eggnog because that flavor isn't my favorite and I didn't want to be tempted to eat a TON of it. I cut a piece to bring a coworker and noticed how moist it looked, and had to try some myself. PEOPLE, this has got to be one of the most delicious and professional tasting cakes ever. It has a strong but delicious and rich eggnog flavor. It was very easy too aside from the weird geletin in water thing which I found to be clumpy but mixed into the whipped cream anyway. I sprinkled mine with some color since it was white white white. If you are a fan of eggnog, do NOT pass this one up! My house still smells delicious days later too!

Cilantro Lime Cod

Reviewed: Dec. 4, 2008
I thought this was good. I replaced the cod with red snapper. I decided to follow the recipe by adding the lime and cilantro prior to cooking, as directed. I certainly could taste the flavors but held some raw behind in case I needed to sprinkle after cooking. I also realized I was out of fresh garlic so instead I used chopped shallots and garlic powder in the topping. The only thing I would change for next time is to take the rind off the lime before putting it on the fish. It caused kind of a bitter taste but without the rind it would be perfect.

White Chocolate Raspberry Cheesecake

Reviewed: Nov. 15, 2008
I thought I had already found the greatest cheesecake recipe out there, but I was wrong. THIS IS IT! I love white chocolate and raspberry together, and it just goes so wonderfully with one another in this recipe I accidently used a 10" springform pan, but it just made it a bit thinner. I used oreos without the icing for the crust and it was divine

Garlic Green Beans

Reviewed: Nov. 9, 2008
DELICIOUS side-dish! I thought that these might end up being bland because of the minimal ingredients, but I was wrong! These were so full of flavor, I forgot I was eating a healthy vegetable. I used the french cut green beans in the can. Another time I used frozen french beans, and they were good but not as good as the french cut ones in a can. Highly recommend!

Grandmother's Buttermilk Cornbread

Reviewed: Nov. 3, 2008
This was way too greasy, sweet, and dense for my taste. I like fluffier and less-sweet cornbread. The consistency really threw me off.

It's Chili by George!!

Maybe I'm not a chili fan in the first place, but I didn't think this was anything special. It gave everyone heartburn too. Oh well. :(

Peanut Butter Cake II

Reviewed: Nov. 2, 2008
I made this for my peanut-butter-loving boyfriend, and I think I FELL in love with this cake. I like dense cakes, and this one totally fit the bill. The outside came out fantastic, formed a wonderful crust. Next time I may put chocolate frosting in the middle of my layers, but the peanut butter icing was delicious too. Just the right amount of sweetness and peanut butter.

Make-Ahead Mashed Potatoes

Reviewed: Nov. 2, 2008
I made this for a Sunday supper, and wanted to get the potatoes out of the way so I could relax before the pot roast was done. This was the answer to not having to time the potatoes to be done right with dinner! These are great even if you don't bake them a second time - I keep stealing bites after they were done.

Sausage Cheese Manicotti

Reviewed: Sep. 11, 2008
I thought the stuffing was a little bland. It needs a kick. If I were interested (which I'm not) I'd try again experiementing with spices. I'll just find another recipe to use.

Roasted Garlic Bread

Reviewed: Sep. 11, 2008
DELICIOUS. You must love garlic. The flavor is not overpowering, but you need to make sure your garlic is roasted and soft before using in spread. I could have eaten a billion of these.

Easy Honey Mustard Mozzarella Chicken

Reviewed: Aug. 24, 2008
This was good, but I'd crisp the bacon on the chicken first before putting the sauce on. The bacon was soggy the way the recipe describes to follow.

Beef Tips and Noodles

YUM! I used campbells lower sodium and then cut back a bit on the soup mix. I also added tons of garlic and used fresh mushrooms instead of canned. I LOVED this! I'll make again.

Chicken Pasta I

Reviewed: Jul. 28, 2008
YUM! For being so healthy, I was surprised at how much flavor this chicken had! The only thing I did different was I chopped the chicken into bite-sized pieces before cooking. I served over multi-grain penne.

Lemongrass and Citrus Poached Salmon

Reviewed: Jul. 21, 2008
I think the orange juice overpowered this dish. Next time, I would cut the OJ in half and perhaps use shallots instead of onions, and maybe more garlic. I feel like it lacked any flavor except the orange juice.

Braised Balsamic Chicken

Reviewed: Jul. 19, 2008
I wasn't a big fan of this recipe. I had hoped for maybe some kind of a bruschetta flavor, but it really was way too overpowerng with the herbs, and the balsamic taste was lost somewhere in between. Perhaps if the chicken had marinated prior to grilling it may have made a difference as well. I probably won't make again.
