Ruby-Red Strawberry Sauce

Make-Ahead Mashed Potatoes

I made this for a Sunday supper, and wanted to get the potatoes out of the way so I could relax before the pot roast was done. This was the answer to not having to time the potatoes to be done right with dinner! These are great even if you don't bake them a second time - I keep stealing bites after they were done.

Sausage Cheese Manicotti

I thought the stuffing was a little bland. It needs a kick. If I were interested (which I'm not) I'd try again experiementing with spices. I'll just find another recipe to use.

Roasted Garlic Bread

DELICIOUS. You must love garlic. The flavor is not overpowering, but you need to make sure your garlic is roasted and soft before using in spread. I could have eaten a billion of these.

This was good, but I'd crisp the bacon on the chicken first before putting the sauce on. The bacon was soggy the way the recipe describes to follow.

Beef Tips and Noodles

YUM! I used campbells lower sodium and then cut back a bit on the soup mix. I also added tons of garlic and used fresh mushrooms instead of canned. I LOVED this! I'll make again.

Chicken Pasta I

YUM! For being so healthy, I was surprised at how much flavor this chicken had! The only thing I did different was I chopped the chicken into bite-sized pieces before cooking. I served over multi-grain penne.

Lemongrass and Citrus Poached Salmon

I think the orange juice overpowered this dish. Next time, I would cut the OJ in half and perhaps use shallots instead of onions, and maybe more garlic. I feel like it lacked any flavor except the orange juice.

Braised Balsamic Chicken

I wasn't a big fan of this recipe. I had hoped for maybe some kind of a bruschetta flavor, but it really was way too overpowerng with the herbs, and the balsamic taste was lost somewhere in between. Perhaps if the chicken had marinated prior to grilling it may have made a difference as well. I probably won't make again.

Slow-Cooker Barbecue Ribs

This is quite possibly one of the best recipes ever! If it weren't for the calories/fat count I'd be making this ALL THE TIME. It was so easy, so delicious, and was way better than recipes even on the grill. I don't think I'll ever even bother with trying to make ribs the traditional way ever again!

Yum, and healthy too! I used two small smoked salmons, and was surprised how much this recipe made. I made this a day ahead to let the flavors mix, and it turned out delicious. I served with Kalua Pig in a Slow Cooker as well as Spam Musubi. Delicious hawaiian feast!

Kalua Pig in a Slow Cooker

DELICIOUS. My boyfriend and his mom couldn't believe the minimal ingredients used to make this. I got red hawaiian sea salt at Trader Joes, and used twice what the recipe called for in Hickory Liquid smoke. I cooked on low for about 19 hours and it just fell apart when it was done. SOO good.

Spam Musubi

I thought these were delicious. They were a little bit of work to put together though! I didn't have a rice press, but I heard that by cutting the other end off the spam can, you can use THIS as a rice press. So I did. Stuffed the rice in the bottom, pressed with a spoon, then laid the spam piece on top of it and packed it on some more. After that, wrapped with my sushi nori and these little goodies were ready to go! The sauce was delicious on it, very sweet and gave the spam extra flavor. I'll make this again!

Grilled Cabbage II

I had expected something out-of-this-world because of all the high ratings this recipe got, but I'd say I just got some good cabbage. The cabbage tasted like cabbage, which I liked, but it wasn't anything mindblowing. I might make again because it's healthy, but I don't see myself craving this or dreaming about it or anything like that. :)

Chicken and Bacon Shish Kabobs

This was so easy and delicious! I let marinade for 2 hours, and about 3 tablespoons of of chopped garlic. I also doubled the marinade so it would really coat all my goodies, and placed in a big ziplock bag. I covered some with turkey bacon and some with normal so that there was a lower fat version, but both were spectacular! I served with barbequed cabbage and grilled asparagus. I will certainly make this again! Just thinking of those mushrooms makes my mouth water!

Brooke's Best Bombshell Brownies

These brownies were delicious! The richest thing you'll ever find. I made exactly as directed, including the massive amounts of sugar and butter. I also used this as the base for "Cheesecake Topped brownies" found on allrecipes and found that they would have been better without the topping. These stand alone and are DELICIOUS!

I had a really hard time tasting anything cheesecakey in these, it seemed like just extra effort for the additional creamcheese layer for no pay-off. Instead of using a prepackaged brownie mix, I made "Brooke's bombshell brownies" found on allrecipes. The brownies themselves were GREAT but next time I'll skip the added step of adding the cheesecake topping.

White Chocolate Gorp

I liked the salty items covered in chocolate better than the rest, so if you feel the same way, my advice would be to add way more preztels and cashews and cut back on the rest. I would consider this more of a candy treat rather than a snack or trail mix, but if you like salty and sweet, this will certainly fit the bill!

Thyme-Rubbed Steaks with Sauteed Mushrooms

My boyfriend made this one Saturday night and I felt like I was eating at a fancy restaurant. The thyme rub added just enough spice to the meat while the sauteed mushrooms were to die for. He used 'baby bella' mushrooms, which I would advise anyone else to do as well.
