Amish Breakfast Casserole

I couldn't find hashed brown potatoes at the grocery store I was at, so instead bought the cubed kind. Perhaps the hashed brown might be better, but the end result of this for me was just a mushy mess. I'd probably go back to using the bread type breakfast casserole.

Southern Candied Sweet Potatoes

These were delicious! I was kind of worried about letting these simmer for so long, but they turned out great. I wouldn't go as far as to say they "candied" but still the end result was a delicuious side-dish of sweet potatoes that went really well with glazed ham.

Cookies 'n Cream Cake

I felt like this cake was kind of a let down. I'm a pretty good baker, and followed this to the letter however this cake didn't rise as well as I had hoped thus leaving it quite dense. I made it for my mother-in-law's birthday, and while she declared it a hit, I really know there are better cakes out there.

Curried Coconut Chicken

This is really quite good. These ingredients weren't strange and I could pick them up at the local grocery store. I've had leftovers for lunch for the past 2 days and it is even better than the night I made it. Good served alone, with rice, or even spaghetti squash.

Green Bean Bundles

Delicious, and low carb if you substitute splenda for the sugar. Really quite easy to make also. These cooked up nicely in my convection oven but you may want to cook a little longer than it states to ensure it crisps up. Its not good when the bacon is even a little soggy.

Cocktail Meatballs

I made these for a Christmas party, and I think out of the whole spread, these were THE BEST thing at the party! Perfect amount of sweet and tangy. The only thing I changed was I added about 1/4 cup of Worceshire sauce, and then threw in a package of smoked Hillshire Farms "lil weenies" since I had them on hand and wanted the dish to go further. The smokey flavor on the weenies with the sweet tangy sauce was to die for! Enjoy!

Spinach Cheese Ball

This cheeseball is delicious! I made it for a Christmas party that I was hosting. Keep in mind that it makes a HUGE cheeseball, it seemed more than twice as large as the normal cheeseballs you see at the store. Next time, I will likely halve the recipe.

Rich Turkey Gravy

I have made this twice now, once for Thanksgiving and once for Christmas. It turned out perfect on Thanksgiving, but a little runny on Christmas. I think it was my fault though because I was too busy multitasking. The flavor is extremely rich and amazing.

Honey Glazed Ham

I made this for Christmas along with a turkey, and surprisingly (being the turkey-lover that I am) I liked this ham WAY more! I bought a mesquite smoked spiral cut ham, pre-cooked. I used the leftover glaze by adding a small bag of baby carrots and letting it cook on medium for about 20 minutes or until the carrots were soft. Next year, I'm not even bothering with making a turkey for Christmas. This will be the recipe foe years to come!

Chicken In Basil Cream

This was really yummy! I made a few changes one on purpose, and one accidental! First, I purposely omitted the breadcrumbs and instead dredged the chicken breasts in milk and grated parmesan mixed with a little italian seasoning. Then fried up as the recipe states. Second, I accidently bought roasted red peppers instead of pimentos, but it was DELICIOUS and next time I will make this "accident" happen again! In the end, my kitchen smelled amazing, the husband raved, and the sauce was amazing over garlic steamed asparagus.

Pork Medallions with Balsamic Vinegar and Capers

This was really tasty. I didnt cut mine into medallions, just cut into 1 inch cubes. I also didnt dredge in flour, and they still turned out delicious!

Pineapple and Basil Sorbet

AMAZING! I had high hopes because I had a watermelon basil salad a while back in San Francisco...but this was even better than I had hoped. I just pureed everything and poured into popsicle molds - no need for an ice cream maker if you don't have one. I can't even describe the flavor - it's kind of how pinapple and coconut come together to make a whole other undescribable flavor (pina colada)....this is the same thing! DELICIOUS and unlike anything else!

Bacon Wrapped Water Chestnuts II

I've made these ever since I was a kid! Only I put a dab of ketchup on the water chestnut before cooking. I know it sounds odd, but it carmelizes and really adds just enough flavor to make the appetizer over the top. We serve with BBQ sauce on the side to dip it into. I've done this with turkey bacon when I'm wanting to watch calories, and it's delicious as well.

Caprese on a Stick

These were surprisingly the hit of our housewarming party! I have to say, they were a pain to assmble but there is something about the flavors of caprese that just cannot be beat. I made a TON of these and they are really beautiful laid out on a pretty platter.

Lemon Grass and Chicken Summer Rolls

These tasted really delicious, however I think there is an art to assembling them! Takes practice! Maybe next time I might add some vermicelli noodles. Served with chilli and peanut dipping sauce.

Balsamic Vinaigrette

I bought salad for dinner last night, but realized that after we moved a few weeks ago I had thrown out all of our dressing! I didn't want to go to the store, so I looked up this simple recipe to try. I am SO glad I did! I just threw the ingredients into my mini-blender and it was 5 star restaurant quality dressing. I was so impressed with the robust flavor, that I think I'm going to serve it at an upcoming housewarming party next month. I doubt I'll buy store-bought vinaigrette ever again.
