Chocolate Chip Pumpkin Bread

This is great for dessert or breakfast! I always get lots of compliments and requests for this recipe. I make a few minor changes. I use the whole bag of chocolate (what can I say, I like chocolate), and I only use 2 cups of sugar and roughly 1/2 the amount of oil it calls for. Although I've made it both ways and really enjoyed it, I just prefer to use less oil and sugar. This recipe should come w/ a warning though b/c you'll eat both loaves WAY to fast!

Carrie's Artichoke and Sun-Dried Tomato Pasta

I ran across this recipe 2 weeks ago and have already made it 3 times. I REALLY love this recipe. The only thing that I changed after I made it the first time was using shells instead of Fettuccinne. Both are great. I just prefer the shells. Everyone should try this!

Fabulous Zucchini Grinders

Fast, easy and delicous!!! I made the recipe exactly as it was written and it was really tasty. You could probably add just about anything to these. Adding onions and red peppers would probably be good if you had the extra time.

Stuffed Guinea Squash (Eggplant)

I enjoyed this recipe and would make it again. I added one red pepper to the mixture and had a little of it left over for a sandwich the next day. Next time I would really try to scrape the eggplant flesh out as close to the peel as possible b/c it didn't cook it all the through for me. Another thing you could probably do would be to cook the eggplant skin in the oven will everything else is getting chopped and cooked. Although I wan't able to eat the skin it was good. I would make it again.

Chinese Cold Pasta Salad

REALLY EASY. I added about a cup of shredded carrots and ginger. I also took the advice of others and only used 1 teapsoon of red pepper flakes and it was still really spicy. Quick and easy I would make this again.
