Banana Banana Bread
We love this recipe. Make a double batch every 2 months with my 5 year old. I usually use 1/2 whole wheat flour. And sometimes add chocolate chips to one loaf for a little excitement. Biggest challenges *always smash the bananas thoroughly - no chunks. And make sure it's blended well enough with the flour mix. I've made many times but still sometimes get pockets of goo and pockets of dry. *Don't over cook, check the bread with a tooth pick early. Time varies based on size of bread pan. This is especially important if you use whole wheat flour as the outside can get tough.

Zippy Egg Casserole
Great! My mom has made egg bakes for years, which are very good and she thought this was better than hers - and dad must have said, "really great Julie" 3-4 times! I served it for Easter brunch. I split the recipe in two, making two versions; one w/hot italian sausage and the other w/ asparagas. Both versions included mushrooms and green onions - everyone loved them both. The pepperjack cheese is definitely the secret ingredients. Kids didn't care much for it though. I will keep this recipe and wow my friends and relatives for years to come.
