Buttermilk Oatmeal Pancakes

Delicious!! I made this GF by using Bob's Red Mill All Purpose Flour instead of the wheat all purposes flour. I never have buttermilk so I used 2 Tablespoon lemon juice and filled a two-cup measure with almond milk. I made the mistake of using a course corn meal so will adjust next time and use a finer grain. I don't think any of these substitutes changed the original recipe just made it gluten and dairy-free friendly. I didn't not find the batter runny at all. It is important to let the oatmeal and buttermilk set for the 5 minutes.

Shrimp Egg Foo Young

Easy, fast delicious. I had fresh mixed sprouts and pre-cooked shrimp. The perfect recipe for an easy delicous meal. I didn't change anything except added more cornstarch to make the sauce a little thicker. The dish is mild so it allows the fresh taste of the sprouts to come through. I'll definitely make it again. (Make your own sprouts. It is easy and nutricious.)

Asian Kale with Noodles

Another great Kale recipe. I love that is so different from the typical way to cook kale. I used rice noodles because I don't eat wheat. It worked out fine and didn't get mushy. Make sure to use FRESH ginger. It makes the dish.Thank you for adding variety to my over abundance of kale in my garden.

Mediterranean Chicken with Eggplant

This was an easy delicious dish that my husband picked out and made. We did substitute red wine for the water as someone suggested. Also I had some thick leftover tomato sauce that we used instead of the paste. This is definitely a keeper. Yummy, yummy, yummy plates were clean.

Wild Rice And Chicken Soup

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This soup was delicious! First time I made it, I only had one sweet potato and a rather old apple so I increased the carrots. The second time I had everything and it was even more delicious. Crusty bread and/or gluten-free crackers and you are good to go. Thank you for this yummy recipe.

Easy Meatloaf

It was so delicious. I have wheat and dairy issues so I substituted rice bread crumbs and used unsweetened almond milk. I sauteed the onions in butter; added a little garlic and oregano because my bread crumbs were plain. When I made the sauce I followed the suggestion and doubled the ketchup and used a heaping tablespoon of mustard. I am definitely making it again. Thank you for this keeper. It has replaced my Mom's recipe. (Paula Dean's potatoes were wonderful with it.)

Simple Kale Soup

Great hearty soup on a cold winter day! I had leftover ham so I used that. I didn't have 8 cups of chicken broth so I used 4 cups of chicken broth and 4 cups of water. It was still yummy!

German Pancakes II

Fantastic. Used a quiche pan and baked it at 400 for 25 minutes so it was pretty and delicious! Even my picky grandson like it. I always saute fruit (apple and/or pears are good) in butter, added maple syrup and pour it in the middle of the pancake when the pancake is done.

End of the Line Ham Casserole

Quick, easy and very adaptable. I highly recommend that you par-cook the potatoes in the micro for about 3 minutes. Even doing that the recipe still took the recommended time.

Classic Macaroni and Cheese

Ruthie (my mom) would be proud. I always loved her mac and cheese but never knew the proportions. (She always tipped the dish to tell how much milk to add. ) This recipe was wonderful and comforting. Both my husband and I loved it. The only change I made was to use regular milk. I shorten the cooking time by 15 minutes. Thank you for this classic recipe.

Creamy Rice Pudding

As good as my baked recipe but much easier and less clean up. I used leftover Chinese rice but cooked it with about 1/4 cup of water first to make it more tender and then proceeded with the recipe. I also used rice milk. Still very creamy. It is definitely a keeper. Thanks for sharing.

Italian Pasta Florentine

I was looking for a way to use up my Italian chicken sausage and this fit the bill. I used ziti and cooked it separately. I saute onions along with the garlic and then added 1 cup of chicken stock. Then I added 1/2 bag of baby fresh spinach, chopped, to that. After the pasta was done, I stirred the chicken-spinach-sausage mixture into the drained pasta and add the parm. cheese. We loved it. Next time I won't wait for leftover sausage.

Hermit Bar Cookies

Great flavor. My home was filled with the aroma of these cookies and when they came out of the oven I wasn't disappointed. I added more flour as one reviewer suggested and the spices were heaping tsp. plus ginger.

Pam's Chicken Enchilada Casserole

My husband and I both loved this quick and EASY casserole dish. I halved the recipe and still had enough for two more meals. I added about a 1/2 cup frozen corn to the halved recipe. I'd definitely make it for a church-covered dish.
