Funnel Cakes IV

Excellent recipe! Tips for best results: you want cake like batter, use 1 tsp vanilla, add sugar to taste, use whole milk, oil must be really hot before you pour. Better than carnival cakes!

Thumbprint Shortbread Cookies

Delicious! I was looking for an eggless recipe as my fridge was running low on groceries and this recipe fit the bill. Cured my sweet-tooth in a bad way!! I also used Splenda instead of sugar and it still turned out great!

Meatballs and Sauce

This can be just as delicious as a quick last minute recipe! I took the advice of another cook and I sauteed onions in evoo then added (previousely frozen) baked meatballs as I warmend the sauce in a big pot for later...to the sauce I added white wine, s&p and stired. I poured the meatballs in the sauce, mixed it up and later added 1 tbls of cornstarch to thicken. Poured the meatballs over some pasta and got rave reviews! I had 3 servings myself...delish!!

Spooky Witches' Fingers

Okay, so these are the tricks you must follow to get an easy and guarateed "finger" look: I used green dye for witch fingers, added about 1/2 cup more of flour, refrigerate dough overnight, when rolling the fingers make sure to make them really really thin because they spread out when you're cooking them, use butterknife to make knuckle slits, use raisins for nails and pinch one side of the raisin and set into the tip of the dough, bake at 365 to cook quickly and not brown the cookies. This will make the best looking witchy fingers and they taste great and it's so much easier to use the raisins!! Everyone thought I bought them at the store!! Tee Hee...

Fluffy Gluten Free Cornbread

Came out dry and not fluffy. I am very picky about cornbread and even non-GF versions can be dry and not fluffy. So, if this is the fluffiest I can get out of GF then I'd rather not have it. Sorry, I was really hopeful but it is just a predictable outcome with GF breads.

Soy Sauce Substitute

Thanks bunches! You saved the day when I couldn't find any soy sauce and needed it to be GF! This was the bomb. Couldn't tell the difference. At the dinner table, I added brown sugar and reduced it and it made a delicious sauce to pour over rice and veggies. Yum!

Cilantro and Garlic Potatoes

very bland. i thought the cilantro would make a big difference but it did not. if i tried this recipe again, i would bake the patatoes and let the seasons meld during the baking. otherwise, it just was not very good. i found myself pouring salt on them to liven up the flavors. it didn't work.

Coconut Chicken

This is a great recipe and even if you tweak or substitute things a little it is pretty reliable to turn out yummy! For example, I didn't have lime juice so I used lemon and my son eats GF so I used GF crumbs instead of panko and I combined all dry ingredients together, the GF flour, coconut and crumbs and the results were 5 start dining! As for the sauce, I took advise from others and tweaked it a bit to suit the taste of my family...i still used the mayo and coconut milk but I added soy sauce about a tsp and cayenne for spice. DELICIOUS chicken...my 8 and 2 year old devoured it, my daughter was on the fence (a little too different for her) and my hubby loved it and is having the left overs for lunch! I made it as chicken breasts and served it with side salads. Thanks for this awesome and unique recipe!

Sweet and Sour Meatballs II

This is truly a 5 star recipe! I actually love this flavor of sweet n sour more than the restraunt style. Healthier Tweek: 1/2 cup brown sugar and 1/3 cup stevia and then I used turkey meatballs. The raves during dinner amongst hubby, a 5 yr old and a 12 yr old made me blush. Next time I'll decrease the brown sugar to 1/3 cup and 1/3 cup stevia and I bet it will still be a super 5 star recipe!!! Thanks for the recipe...a true staple to my collection.

Pound Cake III

i gave it 5 stars for simplicity and the ability to substitute successfully: While it seems impossible, I made it a mission to make this delectable dessert "healthy-ish." I used 1 cup of Lite ICBINB and 1/4 cup butter (for flavor,) 1 cup of sugar and 1/2 cup of stevia, 3 eggs, 2 tbls of vanilla, 1 cup of skim milk, 3 cups of whole wheat flour, and 3 tbls of cornstarch. I can honestly say that the family loved it and didn't miss a thing...it came out beautifully and tasted oh so sinful. Mission accomplished! Yum!

Sweet Potato Casserole II

This is a winner! A few changes due to my own "issues" with eggs. I couldn't make myself put eggs into the mix, I just don't know why it needed eggs. Also, I used honey to sweeten rather than the sugar in the potato mix because I wanted to really make the topping stand out! It had rave reviews and none was left at Christmas!!

Vanilla Pumpkin Pie

Love this recipe! No tweaking required unless you want more of something than the other. For instance, if you LOVE vanilla flavor than add an extra tsp or if you love pumpkin spice then add 1/2 tsp. This recipe is fools proof and delicious!

Simple Southwestern Chicken Salad

A very tasty chicken salad. We rolled it in a flour tortilla with lettuce leaves and a dallop of sour cream. I only went with 4 stars because the flavors were not unique. It was very familiar to a soutwestern dip flavor. Tasty but not unique.
