Made these last night, and was so happy with the result. I only made half a batch to start with in case I was unsuccessful. I heated them to between the soft ball and firm ball stage on my candy thermometer, and then poured it into an 8 x 8 glass pan lined with parchment paper. They were so yummy--the perfect consistency. I was looking to make sea salt caramels, but liked this caramel recipe better. Added some sea salt with the vanilla and then covered in chocolate with another sprinkle of sea salt. Great Christmas gift for my co-workers this year!
