I'm a happily married mom of two beautiful daughters, Genevieve and Aubrey, who keep me on my toes. I also work full time, so I'm in an eternal quest for recipes that are healthy, delicous, and fast for weeknights that are crazy hectic! My kids are also very picky, which makes things really difficult right now. Unless it can be dipped in ketchup, it's unlikely to make it past their mouths!
My favorite things to cook
I really love to bake, but recently my hips have been keeping me from my hobby!! :) I enjoy lightening up recipes that I wouldn't otherwise make though. I really enjoy cooking just about anything, especially southwestern-inspired, italian, grilled, etc...just about the only things I stray from are homemade candies and the deep fryer! I also don't eat red meat or pork, and try to use healthier substitutes for my family too (ground turkey instead of beef, etc).
My favorite family cooking traditions
Christmas cookies, Thanksgiving turkey, Christmas Eve 7 Fish Dinner....and every year on your birthday my mom would make our favorite dish, and I'm excited to carry on this tradition with my two little ones!
My cooking triumphs
My first Easter dinner which consisted of a turkey, a ham, a lasagne, and multiple side dishes and desserts. I was so busy I think I forgot to eat but everyone raved over everything and I felt so accomplished!
My cooking tragedies
There's more than I'd like to admit! They typically come from me reading something wrong, and putting in say a cup of flour instead of a tablespoon, or from me transcribing something incorrectly into my recipe book. Like the pie I made once that called for 3 3/4 cups of milk in the original recipe, but I only wrote down 3/4. Yeah, that was inedible!!

Chicken Scampi I
i just did not enjoy the flavor of this marinade. in my mind, i imagined a butter, garlickly, lemony sauce flavor. this was overpoweringly worcestershire, the lemon was soured by the just wasn't appealing for us. kids and hubby gave a thumbs down :(

Spinach Stuffed Chicken Breast
love it. kids will even eat it! i like to crisp up the bacon and dice it and mix it in with the spinach cheese mixture instead of wrapping the chicken breasts with it - seems to turn out gummy that way for me. thanks!

Pudding Poke Cake
yum. ridiculously easy and the kids always love this. nothing i would make to serve to anyone special, but easy to do on the weekends with the kids. thanks!
