About this Cook
I'm a happily married mom of two beautiful daughters, Genevieve and Aubrey, who keep me on my toes. I also work full time, so I'm in an eternal quest for recipes that are healthy, delicous, and fast for weeknights that are crazy hectic! My kids are also very picky, which makes things really difficult right now. Unless it can be dipped in ketchup, it's unlikely to make it past their mouths!
My favorite things to cook
I really love to bake, but recently my hips have been keeping me from my hobby!! :) I enjoy lightening up recipes that I wouldn't otherwise make though. I really enjoy cooking just about anything, especially southwestern-inspired, italian, grilled, etc...just about the only things I stray from are homemade candies and the deep fryer! I also don't eat red meat or pork, and try to use healthier substitutes for my family too (ground turkey instead of beef, etc).
My favorite family cooking traditions
Christmas cookies, Thanksgiving turkey, Christmas Eve 7 Fish Dinner....and every year on your birthday my mom would make our favorite dish, and I'm excited to carry on this tradition with my two little ones!
My cooking triumphs
My first Easter dinner which consisted of a turkey, a ham, a lasagne, and multiple side dishes and desserts. I was so busy I think I forgot to eat but everyone raved over everything and I felt so accomplished!
My cooking tragedies
There's more than I'd like to admit! They typically come from me reading something wrong, and putting in say a cup of flour instead of a tablespoon, or from me transcribing something incorrectly into my recipe book. Like the pie I made once that called for 3 3/4 cups of milk in the original recipe, but I only wrote down 3/4. Yeah, that was inedible!!

Homemade Black Bean Veggie Burgers
delish! i chose to use 2 eggs and increase the breadcrumbs by 50% in oreder to help them hold together, after reading many of the reviews. i did not have problems with them falling apart, however they were a little mushy which i attribute to the extra breadcrumbs. In terms of seasoning, i thought this recipe was right on - it has a delicious southwestern flair that i really enjoyed. granted no one else in the family would eat this, so i have lots of leftovers, but i intend to freeze them and take them with me to work for lunch. this was my first attempt at homemade veggie or bean burgers, and i thought they were very simple to make and also very flavorful. thanks!

Apple Squares
these were very yummy! i found them to be a little thin. i think next time i would double the recipe and then still bake them in the same size pan. i also doubled the cinnamon and was glad i did. the cinnamon on top might have been too much though - not because of how it tasted, but because there was literally so much it didn't adhere to the top and was falling off all over the place when we were eating them. but all in all these are super easy to make, and they really taste great! we used braeburn apples. yum!

Spinach Chicken Parmesan
a very yummy way to combine chicken and spinach! i found it a bit bland, which had i read the other reviews, i would have seen as a theme and decided to spice it up a bit. but alas, i did not, so it was lacking a little in flavor but wass till very good. i think next time just some garlic will give it enough "oomph". my 5 year old really liked this, though my 3 year old spent most of dinner tonight making gagging noises from her booster sit. you win some, you lose some. i thought it was a very easy, wholesome and yummy meal - thanks!
