Chicken Pot Pie II

Classic chicken pot pie flavor, just as I remembered from years ago. I used one onion and then doubled everything else, and used a 9x13 pan. I used frozen chicken tenderloins on foil-lined cookie sheets, straight into the oven at 375 until cooked--I don't know... roughly a half hour, little less. Very easy to prepare the chicken this way while preparing the rest of the recipe on the stovetop. I sliced the (2) pie crusts into strips and covered the rectangular shape of the pan. After the onion and celery were sauteed, I pureed them with a stick blender because I have an "onion hater". The sauce turned out smooth and creamy. This was a simple, simple meal that turned out great. Thanks!

Easy Peach Cobbler II

I found this recipe to be very quick and easy, and everyone loved the cobbler. The topping did not appear to be bread slices--a nice bonus as it looked more complicated than it really was. I used canned peaches and drained the juice, as the recipe suggests, and there was no shortage of juice in the final product. If you don't drain much, you could be faced with a soupy cobbler. I will be making this often.

Butterscotch Pudding I

This was quite good and I had no trouble. I actively--but not "athletically"--whisked this, and turned down the heat a little bit when I felt it start to thicken on the bottom of the pan. In my case, I did not need to wait for the pudding to boil, as it had thickened (spoon test) before boiling. I will certainly make this again.

Cappuccino on Ice

I used a stick blender to mix thoroughly and "froth it up." It turned out quite well. The recipe proportions result in a pretty sweet drink; that's great for my tastes, but I have reduced the condensed milk a little bit to satisfy my spouse. I see myself making these on a regular basis.

Quick Pumpkin Pudding

A nice idea. The kids loved this and asked me to make more every day for a week. I thought the texture was a little gritty from the pumpkin pie mix. The adults said it was pumpkin pie without the crust--and they are right. In any case, I had to make it again. In my second attempt, I kicked around the concept of cooking the pumpkin and spice, which would alleviate any grittiness. However, one of the strengths of this recipe is its quick convenience. So, I decided to beat a 5.1 oz box of instant vanilla pudding with the 12 oz can of evaporated milk and then combine it with a 30 oz can of Libby's pumpkin pie mix, eliminating the pure pumpkin and pie spice. The kids loved this version as well, and they said that it was creamier. (I didn't tell them that I made it differently.) I will make this again, as any time I can get the kids to eat more fruits and vegetables--although "sugared up" pretty well--I think I've come out ahead.
