Shredded Pork Taco Filling

This is so yummy and quick in the pressure cooker. I bought a pork shoulder at costco that was about 15 pounds of boneless meat. It looks like one large roast but it was actually 2 large, floppy, pieces once I opened the package. For a party I made the Sweet & Savory Pulled Pork recipe, from this sight, in the slow cooker. It was delicious and a hit but I only used about half of the pork. It made a lot and I still had this huge amount of uncooked roast left and wanted something other than BBQ. I found this recipe, with no reviews, but pressure cooker instructions. I doubled all the spices, and used a whole onion because I had at least 6 pounds of meat but otherwise I followed the recipe exactly. This was amazing. I put the shredded meat in soft, steamed, corn tortillas with cilantro and lime juice. And with left overs we had crunchy tacos with shredded cabbage, lime juice and cilantro. ***The only thing that would have made it even better would have been if I cut the roast up a little, like 2-3 chunks because there was one big piece of the pork that didn't get as fall apart tender in one hour in the pressure cooker. I'm sure it would have been perfect if the roast was only 3 1/2 pounds. Yummmmmm!

Lasagna Toss

I love this. I sauteed an onion with ground beef. I only had Orzo pasta and my husband called it Lasagna-Rice. When I told him the only other option was Chinese noodles he said Yaki-Sagna. LOL. Thanks for a quick idea!

I love this. I sauteed an onion with ground beef. I only had Orzo pasta and my husband called it Lasagna-Rice. When I told him the only other option was Chinese noodles he said Yaki-Sagna. LOL. Thanks for a quick idea!

Lip-smacking Popcorn Concoction

I make this every year for our annual Oscar party. One batch fills the largest bowl I own and I always think "they won't eat it all this year" but it is always all gone... and I make a lot of other good food for this party. One year I gave it out in popcorn bags as favors. I wear gloves to toss everything together with my hands, I don't use the cereal, and a helper to pour the coating chocolate in is a good tip. I also pop the popcorn from scratch adding some salt while it's hot. My friend calls it addictive marshmallow popcorn stuff.

Jif® Peanut Butter Fudge

This is yummy and makes up just like the recipe says. I used regular peanut butter. I cooked this to "fudge" temperature on a thermometer and it took exactly 5 minutes.

Spicy Chicken in Tomato-Coconut Sauce

This was good. I added a little sugar (about 2 Tablespoons). I did not add the cayenne as my husband does not like heat. This was not too spicy for him and he is a self proclaimed wuss. It makes a TON of sauce and will make another meal with more chicken and the same sauce. Frozen peas and cilantro would be yummy. I love the consistency of the sauce. I made rice in the rice cooker with sauteed onions and turmeric-so pretty. 3 or more stars=will make again.

Blue Cheese Ball

This was really great. I used pecans-on hand. Nuts really added to this recipe. I cut it back by about 1/3 and it made a large log of cheese. Yummy in celery too!

Delicious Raspberry Oatmeal Cookie Bars

I love these. I also made them in the larger pan and used enought jam, probably about 10oz, to cover the first layer of crumb mixture (firmly pressed in bottom of foil lined pan). Yum! Easy! Beautiful, sprinkled with powdered sugar and cut in diamonds. Thank you for sharing!!

Chocolate Cream Pie II

I used 4 Tablespoons of corn starch and cooked the mixture for 3 minutes once it reached a boil. This would be a good pudding with the 3 Tablespoons of corn starch. I also stirred all of the dry ingredients together in the pan, added the egg yolk and the milk (2 cups half & half 1 cup non fat milk). I used baileys for the extract. Yummy. This was so good and easy. It is VERY rich and chocolatey. I used Penzeys cocoa and it was almost too dark for my husband the milk chocolate fan. But I love it!

Hamburger Cookies

To me the point of this recipe is that it is sooooooo cute. People just want to look at it, but I had some friends tell me they loved the taste and wanted to eat more. :) I made cheese and lettuce out of rolled fondant. I bought some american cheese to match the color using orange & yellow paste colors, rolled out the fondant and cut it with a pizza cutter into squares. The lettuce was obviously green, and I just pinched off little pieces so it had rough edges - very cute! You really don't need much to do a couple dozen cookies. I gave them out at work in a french fry bag that said "a smile for your friday" - because it was Friday - afterwards my husband said it should have said FrYday. From the bottom: Waffer, yellow icing, mint patty, red icing, tiny "lettuce" tiny "cheese", a smidge more red icing if needed, top waffer, honey, sesame seeds. Wrap in wax paper.
