Heavenly Halibut

I've made this 100 times and honestly you will impress family, guests and kids. I have a 5 yr old and 11 yr old that gobble this up every time. My only changes - no butter and instead of hot pepper sauce I use red pepper flakes.

Banana Sour Cream Bread

I am not a banana bread fan but this turned out fantastic. I quartered the recipe to make 1 loaf - used 2 bananas lightly mashed, 1 egg and mini chocolate chips instead of nuts. Baked at 325 degrees for 1 hour and let it cool for 15 minutes. It was gone in 10 minutes with the help of my 4 and 11 year old sons. This is a keeper and I will probably make it again as soon as the bananas get too ripe.

Ultimate High Altitude Chocolate Chip Cookies

I live in Colorado Springs (7000 ft) and these worked perfectly! The only thing I modified was adding a small box of vanilla pudding mix after the vanilla and reduced the flour by 1/4 cup. We like soft, chewy cookies and these came out fluffy and fabulous on 350 degrees for 14 minutes. I've made these twice now, the second time I separated the dough and made the first half the original recipe still using a full 1 cup of chocolate chips and the other half I mixed with 3/4 cup white chocolate chips, 2 oz bag chopped macadamia nuts and 1/2 cup of Craisins. Both cookies came out fabulous and this is my new go to cookie recipe.

Cajun Chicken Pasta

Just made this tonight and it was really good! We used angel hair pasta and a frozen bag of bell peppers (you couldn't even taste the difference). I added about 2 tsp of corn starch to the sauce to thicken and everyone loved it!

Firecracker Grilled Alaska Salmon

WOW! I am not a Salmon fan but my husband has been begging me to cook something other than Halibut so I tried this recipe and it was over the top fantastic! Only change was that I used olive oil instead of peanut oil and let it marinate overnight. I took 2 filets out of the marinade at lunch and stuck them under the broiler for 15-20 min they were perfect on top of a salad!
