Amish Meatloaf

I didn't use all of the topping sauce as it makes a TON. The meatloaf itself is amazing. Very similar to the fantastic meatloaf my husbands grandma made. My family of 5 ate the entire thing in one sitting. Even my son who doesn't eat much meat had 2nds!!

Apple Strudel Muffins

It's a very dry almost cookie like batter. I will grate at least one of the apples and chop the other apple very small but the taste is excelent.

Banana Oat Muffins

Really good and moist. My husband who isn't a huge banana fan even liked them. I added a few oats on top for a little extra crunchy texture. keeper recipe!!

Frosted Banana Bars

These were awesome. I took them to a football pep rally and the ladies in the kitchen tried them and decided to hide them in the back for coaches and themselves. I've had several emails asking for the recipes. I subbed ff yogurt for the sour cream and used white whole wheat flour and homemade cream cheese frosting. SOOOOOOO good!

Sandy's Chocolate Cake

Really really good. I made it for my daughters birthday and she declared me the best mommy ever. I ended up having to add another cup to cup and a half of powdered sugar to the frosting to get it to come together. It was crazy hot and humid (and after baking all day the house was warm) and I'm pretty sure that's why it needed the extra powdered sugar. It's not an overly sickly sweet cake which made it even better.

Southwestern Pasta Salad

I ended up using a lot more lime juice to add some zing to it along with lots of lime zest. It was much lighter than normal pasta salads and the family enjoyed it.

Patty's Tofu Burgers

These were really bland. I ended up adding a bunch of salt and pepper and they were just odd. The hint of curry was weird. My son the vegetarian was the only one who ate more than a bite of it. Not sure what I'm going to do with all the leftovers.

Sean's Falafel and Cucumber Sauce

These tasted really good but they wouldn't stay together in the oil. I tried frying a couple and they kept falling apart. I then switched to cooking them on a slightly oiled griddle (later finishing them in the oven) and they came out nicely. My son is a vegetarian and I'm always trying to find protein rich dishes for him that he will love. He loved these and even his meat eating siblings were fighting over the last couple. I gave it 4 stars because the frying didn't work.

Peppy's Pita Bread

I've tried several recipes and these were by far the best I've tried. My daughter ate a couple pieces plain. I used my kitchenaid using standard bread making techniques and they came out perfect. The trick is to try to keep them round when rolling them out and to never let the dough fold up onto itself while rolling.

Pineapple Chicken Tenders

So so sooo good and so easy. I threw small chicken breasts in the marinade frozen and left them for about 6 hours in the fridge. I reserved a bit of the marinade (before adding the raw chicken) to baste the chicken with as it grilled. My kids aren't big chicken eaters so for the 5 of us I made 7 small breasts. There was only 1 left over!! They are ready to have this again very soon.

Liege Belgian Waffles with Pearl Sugar

really really good. I found the pearl sugar at an international store yesterday and had to try them. They were so similar to the ones we had in Belgium. I think next time I'll increase the salt and the vanilla just to enhance the flavor. I served them plain and with only 4 of us here, there was only 1 left over. Next time I may serve them with ice cream for dessert.

Mom's Best Macaroni Salad

I thought it was okay but no one else would eat it. It was way way way way too sweet and I didn't even add the 1/2 cup of sugar. The dressing may be okay on coleslaw though?!?!

Pfeffernusse Cookies

Very nice spicy cookie. Only change I made was that I used vanilla instead of anise extract since I really don't care for anise. They leave a nice heat in your mouth. All you need is a cup of hot tea and you are set!!

Magic Peanut Butter Middles

Really great cookie. They took a while to make but worth it. I added a couple tsp's of sour cream to the chocolate mix and they are very tender and tasty. The only problem with them is they are so good they are almost gone already!!!

Good Old Fashioned Pancakes

Really really good. I even got compliments from my 11 year old. I wanted something a little different than my every weekend pancake recipe. I added a touch of vanilla too. I ended up having to double the recipe and there were only 2 pancakes left.
