Jen's Heavenly Egg Salad

Super egg salad. I left out the green onions (although I'd love them!) for my kids. We ate it on warm French bread with lettuce, avocado and tomato. Side of tomato basil soup. Great and quick dinner. I just eye balled the lemon juice until the consistency was about right.

The Best Rolled Sugar Cookies

Great recipe. I added 1/2 tsp almond oil and used an icing with almond oil as well. These were delicious cookies. Six minutes was perfect in my oven. These Do not spread much so our butterflies kept their shape nicely. I will use this recipe again.

Sugar Cookie Icing

I had to tweak this a bit to get the consistency right. Just added a little more milk as needed and kept the icing from drying out by covering the bowl with a damp kitchen towel. When I first made the icing, I used the thicker version to pipe an outline with a Wilton round tip #4. Then I thinned it out and spooned it in. Used a toothpick to spread it out into all corners. Let it dry thoroughly and then decorated. The leftover icing had thickened a tad, which was good for piping on the details. This isn't the best icing for a lot of detail or writing names. It spreads out slightly before drying. Took hours to dry. Had to let the cookies set overnight before I could stack them. I tried after 5 hours and they were still a little tacky. Nice shine to them and the almond oil is delicious. That's what makes a tasty icing, in my opinion. I would use this again but the next time I will try one with merengue powder to see which I like best.

Pizza Casserole

What I liked about this casserole most is that my kids ate it and I could sneak in the onion and bell pepper. I just short of pureed them in my mini food processor, so they never detected the crunch of an onion! Then I sauteed the "mush" with some garlic. I used Ragu Pizza sauce but added some extra Italian herbs. Used a blend of Italian cheeses. I thought it was pretty good but my husband and I like more complex flavors than this. One reviewer suggested adding some Italian sausage and I think this would have done the trick. I'll make it again. I made it ahead of time, put it in the fridge for a few hours and then baked. I love make ahead dishes.

Chicken Breasts in Caper Cream Sauce

Delicious. I modified slightly. Didn't have lemon pepper so deglazed my pan with the juice of 1 lemon before adding the whipping cream. I used abt a half a pint of cream and it was plenty. I went easy on the dill, not my favorite flavor. I also added a little freshly grated Parmesan to the sauce. Served with a mixture of roasted vegetables. Yum.

Chunky Monkey Pancakes

I hate bananas but I made these for my family. They thought they were divine. Kids devoured them! I served them with a little whipped cream, more slices of banana and a few more choc chips. ...no syrup. I'll make again. Oh! ...toasted the pecans in a pan before hand (better flavor that way). Made them a second time. Added 1/2 tsp of almond oil. Yummy! Made a couple for myself before adding the banana. Served with syrup and powdered sugar today.

Slow Cooker Meatballs

I thought these were pretty great. I made the meatballs the night before and browned them in a skillet first. I also seasoned them more heavily than the recipe calls for (Italian seasoning, basil, oregano, garlic powder and onion powder). Left out the onions for my kids. Instead of a jar of sauce, I used 28 oz of crushed tomatoes, 1 can tomato purée, 1/4 c red wine and lots of the same spices I used in the meatballs. The meatballs were incredibly moist and tender and I just LOVE having dinner made by 10 am in the morning!!!! Will make again.

Korean Salad with Sesame Dressing

I was desperate to pull a quick meal together using one heart of romaine and frozen, mini pot stickers. That's all I had! I chopped the lettuce and arranged the pot stickers around it. I used this dressing on top. Great on the lettuce and a good dipping sauce for the pot stickers. It was quite good! Very few ingredients, that I just happened to have. I'll make it again.

Charleston Breakfast Casserole

I used sausage instead of bacon, a red bell pepper and onion (that I sautéed in butter). I also added a can of diced green chilies. I also used seasoned croutons. Yummy! My 4 yr old ate it but my picky 7 yr old wouldnt touch it. My husband and I loved it.

Beef Tips and Noodles

I LOVED this but my husband and son didn't care for it much. I don't really understand why because they love Jennie's Heavenly Slow Cooker Chicken. I thought this was fairly similar in style. Oh well. I would certainly make it again if they didn't throw such a fit about it. Cooked in the slow cooker and the meat was fabulously tender. I was going to put fresh mushrooms in it and then forgot. Still great w/o them. Served over egg noodles and a side of peas.

Pork Medallions with Balsamic Vinegar and Capers

Ehhh, it was okay. I normally love the dishes that get 4-5 stars. I should have gone with my gut and thrown my nice and crispy medallions in the oven to finish them off. Then made the sauce to serve with it. By braising the medallions, they get soggy and the nice crust peels off. Gross. I knew better. If you like this sort of thing, just follow the directions exactly.

Stuffed Mexican Peppers

I made these with red bell peppers that I steamed in the microwave for a few minutes. I added chopped cilantro to the meat mixture, while cooking, and used a can of Rotel since I failed to buy tomato sauce. Topped with shredded cheddar and baked until bubbly and brown on the top. These had lots of flavor. These arent my favorite dish in all the world but a great, and somewhat healthy, midweek meal. We will be making them again.

Asian Lettuce Wraps

Yum! I will add this to my list of regulars. Doubled the sauce, used fresh ginger (although I used too much; no more than 1 tsp for the double batch, in my opinion). Added fresh cilantro to the top. Used left over rotisserie chicken instead of ground beef (because I had it). Next time, shredded carrots would be a good addition. Great dish!

Meatball Nirvana

Did I overcook them? They were just okay. I've made better. They were just kind of dense (and I didn't over work the meat). I used a 90/20 ground beef but I've used lean meat before with great success. Maybe I overcooked them. After baking, I let them simmer in my homemade sauce for an hour and a half. Not my best sauce either so maybe I was having an off night. I'm not sure I'll use this recipe again but don't not try on my account. I usually pan fry my meatballs and finish in the oven. I prefer that (more flavorful).

Slow-Cooker Lasagne

I love my slow cooker and am looking for more ideas. Love this idea but miss having the melted/burned cheese on top that you can achieve in the oven. Also, I seasoned the ground beef heavily (Italian seasoning, crushed fennel seed, salt, pepper, garlic and onion powder, oregano). The cheese mixture was good but needed more seasoning (maybe salt, pepper, dried basil and oregano). The big mistake I made was using cheap sauce. I always make homemade sauces so I don't know much about jars of sauce and what to buy. I figured I would go with the well known brand that starts with an R....since I knew there wouldn't be tomato chunks that my young kids would not like. That sauce is too bland for me. Next time, I'll hopefully find something better or just use my own, frozen, homemade sauce. I think it could use more noodles (maybe add another layer in there??). I think the addition of Italian sausage would be a good one! I just wasn't willing to spend the money on a dish I wasn't sure we'd like. I will definitely make this again, because I just LOVE having dinner complete at the end of a day but I will modify it next time. Lastly, I cooked it on low for 2 hrs and on high for 2. Not anywhere near burned. It could even go a couple of more hours.

Asian Beef with Snow Peas

This wasn't PF Chang's but the sauce had a super flavor!! I froze the meat for about 30 minutes so that I could cut it very thin! I sauteed the meat on high heat to try to get some browning (added the garlic and ginger afterwards...didn't want it to over cook). Doubled the sauce (which I highly recommend) and used frozen mixed Asian veggies. Served over basmati rice. Pretty great for a random Monday or Tuesday night meal. Quick too.

Delilah's Frosted Cut-Out Sugar Cookies

I only made the icing (used it for a gingerbread man recipe). I had to add more milk than it called for. Added 1/2 tsp of almond oil. Delicious and easy to work with! Piped it out of a baggie where I cut a tiny tip off the corner.

McCormick® Gingerbread Men Cookies

Yum! These are really great! I rolled the dough out to a little thicker than 1/4". Had to throw the dough into the freezer at one point (it warmed up quickly and was too sticky to work with). I pulled them out before I thought they were completely done and left them to cool on the cookie sheet. They were perfect! Soft and delicious! I used the icing from Delilah's Frosted Cut-Out Sugar Cookies on this site (but added about 1/2 tsp almond oil to it). So yummy! The kids decorated the gingerbread men with raisins and M&M's, because that's all we had. What a fun activity. We will make these again.

Slow Cooker Beef Stew I

Yum. I used a roast that I dredged in flour and browned in a skillet first. Deglazed the pan and added that in too. I also used a packet of McCormick beef stew seasoning. Used red potatoes with the skin on, carrots and no celery since I didn't have it. At the end, I sauteed mushrooms in a little butter and added them to the crock pot. Then, shredded the meat.

Pancake Stack with Syrup

These were good but I have had more exciting pancakes. They weren't just bursting with flavor like a pumpkin pie. I might add a little more spice next time. My family enjoyed them, however. Don't cook too fast or you will have raw middles; they are thick but that is what makes them fluffy. Maybe top with roasted pecans. I made a simple syrup with 1c brown sugar, 1/2 c water, 2 tsp butter and 1 tsp vanilla. I will make them again.
