Banana Oat Muffins

If 3 1/2 stars was available I would vote that. They are decent muffins, not too time consuming to make, and not too dry. However, that said, I didn't think they were anything too special. They are quite dense and lacking in flavour. Granted, I did make a few substitutions: 1/2 cup WW flour + 1 cup white instead of 1 1/2 cups white; Ener-G egg replacer instead of the egg; and applesauce instead of oil. I really don't think those changes should have made a huge difference in flavour and texture, though. I think the recipe would be greatly improved even by adding a tsp or 2 of cinnamon in the mix, and maybe a little nutmeg or a pinch of cayenne. They are just a little too bland for my liking. Thanks, though! Oh, I also baked for only 15-16 minutes and they were done.

Salmon with Dill

Very simple yet super yummy! I used fresh frozen dill, which I'm sure improved the taste even more, but my husband and I both thought this was delicious. I will definitely be making this again. Thanks!

Simple Salmon Chowder II

Shortbread Crust

Very quick, simple pie crust recipe. It has a much lighter texture and flavour than pastry or graham crusts and almost got lost under my lemon meringue pie. I think this would be better used for a filling with a subtle flavour, or a pie where you want the filling to be tasted and the crust used mainly for support. I actually made this gluten and dairy free by using gluten free all purpose flour (a combination of rice, potato and tapioca flours) instead of wheat flour and margarine instead of butter. It turned out great and I would definitely use this recipe again.

Maple Salmon

Absolutely delicious and VERY easy to make. I highly recommend this recipe! I usually halve the recipe to use for 2 fillets of salmon and it works perfect.

Oatmeal Applesauce Bread

This is a great recipe! I have to admit I haven't tried it "as is" because I tend to healthify things, but even the healthier version is delicious and I get complimented on it, so I imagine the original would be yummier if anything. I replace the sugar with honey, 1 cup of the flour with whole wheat flour, and the butter with coconut oil, and it turns out fabulously. I do have to add more water than the recipe says (about 3-5 tbsp) but I'm not sure if that's the recipe or because of our dry environment or the whole wheat flour. I would definitely recommend this recipe!

This was quite good, but not the best ever. I prefer mine a bit sticky/gooey and this is more of a dry crisp. I am still on the lookout for the perfect apple crisp!

Five Minute Ice Cream

This was very yummy and a huge hit with my informal dinner party. Our guests asked for the recipe so she could make it at home and my (often picky) husband loved it. I rated it at five stars because it was easy to make, we loved it, and I think most people who try it would enjoy it as well. However, I do have a couple things to note. First of all, I found the finished product was MUCH too runny to serve immediately. I used a not super powerful blender which contributed, I'm sure, as well as using strawberries that weren't 100% frozen since I they had been frozen whole and I had to take the time to slice them. My finished product was a runny milkshake consistency and didn't even resemble a solid. After sitting in a deep freezer for about 3 hours, it was sufficiently frozen around the edges but still somewhat runny in the center. Still delicious, though! Secondly, the finished product was sweeter and creamier than I liked. Next time I think I would try 1/3 cup sugar and maybe 1/2 cup cream (I used whipping cream, 33% MF) with milk topping up to 2/3 cup. I anticipate that will still be sweeter and creamier than needed, but I would rather slowly step it down than make a flop. Also, I added 1/4 tsp vanilla as a previous reviewer recommended and I'm glad I did. Overall, we really enjoyed this recipe and I will definitely be trying it again. I look forward to experimenting with different flavours!

Salad Dressing Cupcakes

I wasn't super impressed with these. The taste was okay, but definitely not exceptional and the result was an overly dense, heavy cupcake where I prefer my cake to be moist, light and fluffy. They were definitely simple and quick to make but, personally, I still didn't think it was that worth it. I get better results from cake mixes with even less effort. I did follow this recipe to a T, even setting the timer for the 2 minute mixing. If you're looking for a fabulous chocolate cake recipe and willing to put in a bit more effort, I HIGHLY recommend the "Sandy's Chocolate Cake" recipe on allrecipes.com. I make it with the frosting recipe she provides or (we prefer) with Wilton chocolate buttercream frosting. It gets RAVE reviews every time I make it (at home, baby showers, bake sales, etc.) and the cupcakes freeze well so you can make a big batch and save them for later -- if there are any left to save!

Satiny Chocolate Glaze

This was delicious! I used milk instead of corn syrup and it turned out great. I only gave 4 stars because it calls for corn syrup, which is practically diabetes-in-a-bottle and almost guaranteed to be GMO unless it's organic. I also added some peppermint flavoring and it was super yummy. Will definitely be making again!

Apple Pie Muffins

These muffins are really good. I made them exactly as directed and I like them a lot. However, I have to say that I think the topping is completely unnecessary and only adds to the fat and calorie count, as well as the prep time. In fact, I made a few without the topping and actually like them better than the ones with. I also found that 25 minutes was too long in my oven -- 18-20 probably would be more like it. I will likely make these again, but without the topping. I might add a bit more apple and a tsp or so of cinnamon to the batter next time, since there won't be any topping. Thanks!

Home Style Macaroni and Cheese

There was nothing *wrong* with this recipe, exactly. It turned out fine. Just not *great*, at least to my tastes. I found the cheese sauce to be too pasty/thick with lots of creaminess, but not a lot of cheese flavor. I was really hoping I would like this one because it was so highly rated, but I guess we can't all have the same tastebuds, right? My search for the mac & cheese of my memory continues, as I won't be making this one again. Thanks anyway, though!

Almond Sole Fillets

Very tasty. I never would have thought to put toasted nuts on fish, but it turned out great. I didn't have almonds so I chopped up 1/4 cup of cashews and toasted them in the microwave instead. I used a lot less margarine than called for (maybe 1 tbsp or so) and it was still a little too much. I baked the fish in the oven instead of the microwave to preserve more nutrients, but otherwise followed the recipe exactly. Like I said, it was very tasty and I would definitely try it again.

Sourdough Drop Biscuits

This was a very tasty, quick and easy recipe to make, and very moist for a biscuit. I will definitely be using it again. I recommend cutting back the oil to 1/4 cup and hand-kneading if necessary to work it in. Method Notes: I made them with the listed ingredients, besides cutting back the oil a bit as another reviewer suggested; I used a touch over 1/3 cup extra virgin olive oil for a 1.5 recipe rather than the 1/3 cup for 1 recipe (so about 1/4 for a single recipe), and it required a bit of hand kneading to work it in evenly. I think I would opt for 1/2 coconut oil, 1/2 EVO next time, as they were a little too olive-y for my tastes--butter would be even better, I'm sure, but I tend to try to healthify things and don't have access to raw, grass-fed butter. Maybe it was cutting back the oil, but they definitely turned out as biscuits for me, rather than cookie-like as some reviewers mentioned. I used standard, unsweetened sourdough starter and did not add any sweetening agent. I divided the dough into 18 (so a dozen per recipe-worth of dough) hand-shaped balls, rather than just dropping by spoonfuls, and they turned out lovely and light and delicious.

Simple 'N' Delicious Chocolate Cake

I would give this recipe 4.5 stars if I could, but I'm giving it 5 because I think it deserves more than 4. This isn't the best chocolate cake I've ever had (see "Sandy's Chocolate Cake" on here for that) but it is the best quick and EASY chocolate cake I've had. If I'm wanting the best ever and have the time, I will still go for Sandy's, but I will definitely use this again when I just don't have the time or energy for all the extra steps, or don't have sour cream or yogurt on hand. Thanks!

Cream Cheese Frosting II

This "frosting" is runny and definitely a tangy cream cheese icing, not very sweet at all. The taste of it is fine if a really rich, tangy icing that tastes reminiscent of concentrated plain New York cheesecake.

Passover Chocolate Torte

I would give this 3 1/2 stars if I could, but went with 4. It was quite tasty. I baked 45 minutes and it should have been more because it was runny in the middle, but it still tasted good. I ground slivered almonds in my coffee grinder, which worked pretty well, but I think I would try to buy almond flour next time for a smoother texture. I also added peppermint flavoring to taste, which was delicious. Oh, and I used butter instead of margarine, but I doubt it made much of a difference in flavor.

Broiled Tilapia Parmesan

I love that this dish is so quick and easy to make and that I didn't have to go out and buy special ingredients to do so. I thought it was quite tasty and would be happy to have it again, though it wasn't my all time favorite. My husband said it was just okay, but he's picky so who knows. I made it with Miracle Whip and found it was a little overly tangy so next time I would like to try it with the actual Mayo the recipe calls for or even sour cream or plain yogurt. The combo of ease of preparation, quick cooking time and good flavor means I will definitely be making this again!
