Firefighter's Favorite Chocolate Chip Cookie

This was a decent cookie, but not exceptional. I found it to be rather "cakey" and I prefer a firm but chewy cookie. Also, I used only a 1/2 cup of chocolate chips and 1/2 cup of SKOR toffee bits, which was plenty of both.

Maple Salmon

Absolutely delicious and VERY easy to make. I highly recommend this recipe! I usually halve the recipe to use for 2 fillets of salmon and it works perfect.

Outrageous Chocolate Chip Cookies

This was a very good cookie recipe. Not the best ever, but very good. I think the peanut butter kind of takes away from the chocolate chip cookie taste, but maybe it's just me. I like peanut butter cookies and I like chocolate chip cookies but the combination didn't dazzle me. For timing, definitely err on the side of cooking for less time. If you wait until the cookie edges are actually browning like it says in the recipe, they're overdone and not nice and chewy. I think 9 or 10 minutes would've been perfect (I did 11 and it was a little too long).

Grandma's Lemon Meringue Pie

This is a good recipe. I think it was my first time making lemon meringue pie from scratch and it was a lot easier than I thought. The flavour was nice but quite mild; not as tangy and lemony as my husband and I tend to like. I don't think it would make much of a difference, but I used 6 tbsp Realemon lemon juice instead of fresh squeezed and 1 tsp lemon extract instead of lemon zest (an approved substitution according to the allrecipes.com substitution list). I might try making this again, but I think I would try doubling the lemon extract next time to see if the flavour turns out more to my liking. Overall, a recipe worth trying.

Shortbread Crust

Very quick, simple pie crust recipe. It has a much lighter texture and flavour than pastry or graham crusts and almost got lost under my lemon meringue pie. I think this would be better used for a filling with a subtle flavour, or a pie where you want the filling to be tasted and the crust used mainly for support. I actually made this gluten and dairy free by using gluten free all purpose flour (a combination of rice, potato and tapioca flours) instead of wheat flour and margarine instead of butter. It turned out great and I would definitely use this recipe again.

Almond Sole Fillets

Very tasty. I never would have thought to put toasted nuts on fish, but it turned out great. I didn't have almonds so I chopped up 1/4 cup of cashews and toasted them in the microwave instead. I used a lot less margarine than called for (maybe 1 tbsp or so) and it was still a little too much. I baked the fish in the oven instead of the microwave to preserve more nutrients, but otherwise followed the recipe exactly. Like I said, it was very tasty and I would definitely try it again.

Salad Dressing Cupcakes

I wasn't super impressed with these. The taste was okay, but definitely not exceptional and the result was an overly dense, heavy cupcake where I prefer my cake to be moist, light and fluffy. They were definitely simple and quick to make but, personally, I still didn't think it was that worth it. I get better results from cake mixes with even less effort. I did follow this recipe to a T, even setting the timer for the 2 minute mixing. If you're looking for a fabulous chocolate cake recipe and willing to put in a bit more effort, I HIGHLY recommend the "Sandy's Chocolate Cake" recipe on allrecipes.com. I make it with the frosting recipe she provides or (we prefer) with Wilton chocolate buttercream frosting. It gets RAVE reviews every time I make it (at home, baby showers, bake sales, etc.) and the cupcakes freeze well so you can make a big batch and save them for later -- if there are any left to save!

Five Minute Ice Cream

This was very yummy and a huge hit with my informal dinner party. Our guests asked for the recipe so she could make it at home and my (often picky) husband loved it. I rated it at five stars because it was easy to make, we loved it, and I think most people who try it would enjoy it as well. However, I do have a couple things to note. First of all, I found the finished product was MUCH too runny to serve immediately. I used a not super powerful blender which contributed, I'm sure, as well as using strawberries that weren't 100% frozen since I they had been frozen whole and I had to take the time to slice them. My finished product was a runny milkshake consistency and didn't even resemble a solid. After sitting in a deep freezer for about 3 hours, it was sufficiently frozen around the edges but still somewhat runny in the center. Still delicious, though! Secondly, the finished product was sweeter and creamier than I liked. Next time I think I would try 1/3 cup sugar and maybe 1/2 cup cream (I used whipping cream, 33% MF) with milk topping up to 2/3 cup. I anticipate that will still be sweeter and creamier than needed, but I would rather slowly step it down than make a flop. Also, I added 1/4 tsp vanilla as a previous reviewer recommended and I'm glad I did. Overall, we really enjoyed this recipe and I will definitely be trying it again. I look forward to experimenting with different flavours!

Home Style Macaroni and Cheese

There was nothing *wrong* with this recipe, exactly. It turned out fine. Just not *great*, at least to my tastes. I found the cheese sauce to be too pasty/thick with lots of creaminess, but not a lot of cheese flavor. I was really hoping I would like this one because it was so highly rated, but I guess we can't all have the same tastebuds, right? My search for the mac & cheese of my memory continues, as I won't be making this one again. Thanks anyway, though!

Quick and Easy Alfredo Sauce

We didn't really like this sauce. It was simple enough to make, though I wouldn't call it "quick" considering how long it took for the cream cheese to melt in, despite cutting it up a bit first. The sauce, however, was much too rich and creamy for our liking. The taste was VERY rich and it was so creamy that the texture was almost pasty. I even used light cream cheese. Oh, and I used 1 tsp minced garlic instead of the garlic powder. My two-year-old son refused to eat this altogether, and my husband and I felt sick to our stomachs after doing so. I won't be making this again. Thanks anyway!

Sandy's Chocolate Cake

This is the best chocolate cake I have ever made, and possibly the best I've ever tasted. Everyone who tries it loves it, and many have asked for the recipe, often adding in, "IF you're willing to share." This cake never fails to get rave reviews no matter where I take it. The frosting recipe given here is very nice, but I think we actually prefer to use the Wilton Chocolate Buttercream recipe found on the Wilton website.

Apple Pie Muffins

These muffins are really good. I made them exactly as directed and I like them a lot. However, I have to say that I think the topping is completely unnecessary and only adds to the fat and calorie count, as well as the prep time. In fact, I made a few without the topping and actually like them better than the ones with. I also found that 25 minutes was too long in my oven -- 18-20 probably would be more like it. I will likely make these again, but without the topping. I might add a bit more apple and a tsp or so of cinnamon to the batter next time, since there won't be any topping. Thanks!

Banana Oat Muffins

If 3 1/2 stars was available I would vote that. They are decent muffins, not too time consuming to make, and not too dry. However, that said, I didn't think they were anything too special. They are quite dense and lacking in flavour. Granted, I did make a few substitutions: 1/2 cup WW flour + 1 cup white instead of 1 1/2 cups white; Ener-G egg replacer instead of the egg; and applesauce instead of oil. I really don't think those changes should have made a huge difference in flavour and texture, though. I think the recipe would be greatly improved even by adding a tsp or 2 of cinnamon in the mix, and maybe a little nutmeg or a pinch of cayenne. They are just a little too bland for my liking. Thanks, though! Oh, I also baked for only 15-16 minutes and they were done.

Broiled Tilapia Parmesan

I love that this dish is so quick and easy to make and that I didn't have to go out and buy special ingredients to do so. I thought it was quite tasty and would be happy to have it again, though it wasn't my all time favorite. My husband said it was just okay, but he's picky so who knows. I made it with Miracle Whip and found it was a little overly tangy so next time I would like to try it with the actual Mayo the recipe calls for or even sour cream or plain yogurt. The combo of ease of preparation, quick cooking time and good flavor means I will definitely be making this again!

Satiny Chocolate Glaze

This was delicious! I used milk instead of corn syrup and it turned out great. I only gave 4 stars because it calls for corn syrup, which is practically diabetes-in-a-bottle and almost guaranteed to be GMO unless it's organic. I also added some peppermint flavoring and it was super yummy. Will definitely be making again!
