Oven Fried Lemonade Chicken

This is my husband's favourite dinner-so easy and delicious! I took some of the suggestions and marinade the breasts in limeade. I always use cornflakes and toss in a few extra spices instead of the thyme-chili and garlic powder. Will keep making this again and again, thanks!

Avocado and Tuna Tapas

This was amazing and satisfying! My husband thought it was a tad too creamy for him but he doesn't like mayo! I didn't have green onion on hand so I used finely diced red onion. I also used a few drops of greek style vinaigrette instead of balsamic vinegar. This has become my favorite way to use tuna and avocado together, thanks so much for sharing!

Slow-Cooked Corn Chowder

Amazing chowder! I made this almost exactly as-is, just added 1 tsp of chili powder as another reviewer recommended and to alleviate the problem of curdling milk, I reduced my amount to 1 1/4 cups and mixed it with a can of cream of potato soup. Definitely worth 5 stars! Husband thinks it's worth 4 stars because he would have preferred chunks of real potatoes instead of hash browns (I used cubed ones). This will be great for those cold wintery Canadian nights! Thanks so much for posting Mary!

Apple Muffins

I've made these muffins twice now and I'm rating the recipe as written. The first time I made the recipe as written and I found it to be quite bland. So I made them again and changed it up a bit. I used 1c all purpose flour & 1c whole wheat flour. I used the 1/2c white sugar but added 1/4c brown sugar (3/4c total). I substituted applesauce for the vegetable oil and I used 1tsp pumpkin pie spice instead of just cinnamon (was going to use apple pie spice, but my husband used it all up and didn't tell me!) I also used 1 1/2c apples (2 medium sized apples diced). I found these changes made the muffins really made the apple flavor stand out. My husband thought these were some of the best muffins I've ever made and my daughter gobbled hers up!

Asian Pork Burger

Great recipe! I had to omit the bell peppers and soy sauce because I didn't have any, but other than that I made no changes. We topped our burgers with chopped cilantro, grated baby carrots, sliced onions and a bit of sriracha sauce to add to the Asian flair. I'll be making this again!

Almost No Fat Banana Bread

This is a good base recipe for low fat banana bread, but I found there was a lack of flavor the first time I made this. The second time I decided to give it a bit of a Caribbean kick-I used 1/2c brown sugar, did 3/4c whole wheat flour & all purpose flour, added 1/4 tsp allspice, and subbed in a splash of Appleton rum. I also used some dark brown bananas to give it an added sweetness. My husband raved about it so much he's already requested I only ever use this recipe in the future!
