Apple Crumble Pie

About this Cook
I began to really appreciate cooking when I went to college back in 1999 for Food & Beverage Management. I decided not to become a restaurant manager or chef, because I hated to have to rush through the cooking process. I moved out to Alberta in 2004 and met my now husband, who I believe makes the best breakfast omelets I've ever had. He inspires me to try out new flavors and cooking methods. But we truly believe the best foods can be cooked over an open fire, and we don't believe that camping foods are limited to hamburgers and hotdogs-we call our version of camping, "glamping"-or glamour camping.
My favorite things to cook
My husband and I just got a pizza stone for our wedding and we love to experiment with making our own pizza instead of ordering it in. I'm a big fan of cooking comfort food in the winter, especially casseroles. As we are busy people we're big fans of having leftovers! Our slow cooker is my best friend on weekends when the flavors of the foods cooking fill our home with a wonderful smell we can appreciate all day!
My favorite family cooking traditions
Definitely has to be making perogies at Christmas. My great grandmother was Ukranian and every year early in December we would gather-the kids pinching perogies, my dad rolling the dough, and my nana boiling them. I've never been able to find better perogies anywhere else, so I'm hoping to resume the tradition in the future. It's one of the memories I have that I am most fond of :)
My cooking tragedies
Would have to be the runny pie! I made a blueberry crumble pie to take to a friends dinner. When I went to cut and plate it, it was so runny it looked more like a blueberry crisp on the plate despite my best efforts! However, the couple and my husband RAVED about how good the pie was, so I didn't feel as bad about serving it! There have been many other tragedies, too many to list, but I still enjoy doing it no matter what the outcome of the dish!

Almost No Fat Banana Bread
This is a good base recipe for low fat banana bread, but I found there was a lack of flavor the first time I made this. The second time I decided to give it a bit of a Caribbean kick-I used 1/2c brown sugar, did 3/4c whole wheat flour & all purpose flour, added 1/4 tsp allspice, and subbed in a splash of Appleton rum. I also used some dark brown bananas to give it an added sweetness. My husband raved about it so much he's already requested I only ever use this recipe in the future!

Asian Pork Burger
Great recipe! I had to omit the bell peppers and soy sauce because I didn't have any, but other than that I made no changes. We topped our burgers with chopped cilantro, grated baby carrots, sliced onions and a bit of sriracha sauce to add to the Asian flair. I'll be making this again!

Apple Muffins
I've made these muffins twice now and I'm rating the recipe as written. The first time I made the recipe as written and I found it to be quite bland. So I made them again and changed it up a bit. I used 1c all purpose flour & 1c whole wheat flour. I used the 1/2c white sugar but added 1/4c brown sugar (3/4c total). I substituted applesauce for the vegetable oil and I used 1tsp pumpkin pie spice instead of just cinnamon (was going to use apple pie spice, but my husband used it all up and didn't tell me!) I also used 1 1/2c apples (2 medium sized apples diced). I found these changes made the muffins really made the apple flavor stand out. My husband thought these were some of the best muffins I've ever made and my daughter gobbled hers up!
