Broccoli and Ramen Noodle Salad

This is a wonderful salad. I have made it several times for large groups and everyone loves it! I use half the peanuts and sunflower kernels instead of seeds. Delicious!

Awesome Slow Cooker Pot Roast

I cut up some carrots and potatoes and put in slow cooker first. I also added a little beef broth in addition to the water. I agree that the sauce makes the meal! My meat turned out a bit dry (I used a 5 pound rump roast.)

Baked Salmon Fillets Dijon

Delicious! I used 2 Tbsp of Dijon and 1 Tbsp of honey. Only used about 2 Tbsp of butter. Everyone in my family enjoyed it!

Breaded Chicken Fingers

These are delicious and very easy to make. The chicken is very moist. I didn't have buttermilk so I substituted plain yogurt and they still came out terrific!

I agree with everyone else's reviews. This is a wonderful marinade. The flavors blend nicely and the lemon/lime is a great combo. Will definitely make again and share recipe with others.

Cinnamon Bread I

Lime Chicken Soft Tacos

Greek Salad I

Nice combination of flavors. Makes a lot so make sure you have a lot of people to eat it because the veggies get pretty soaked and are too soggy to eat the next day.

Buttermilk Coconut Bars

Very good -- sweet with a little bit of spice. I omitted the glaze -- don't think it's needed. I agree with previous reviewer who said it's really a cake on top of a crust. Kind of an odd combination but . . . tastes wonderful!

Gourmet Sweet Potato Classic

Wonderful-- big hit with everyone on Thanksgiving. My mom told me this dish can be my annual contribution to the Thxgiving table. I used half sweet potatoes and half yams. They did not get soft after 35 minutes in the oven so I ended up cooking them in the microwave. Also, only used about 1/2 of the butter in the sweet potato mixture.

Baked Dijon Salmon

Excellent! The combination of honey/Dijon with the nuts and bread crumbs was delicious. I used walnuts instead of pecans and it was still good. I ended up with leftover sauce and breadcrumb mixture.

Quiche

Absolutely delicious and very easy to make. Great because you can do it ahead and freeze it and then pull it out whenever you need it. I used cheddar cheese since I don't care for Swiss. Also used about 1/4 c heavy cream and 3/4 c milk. My son has already requested that I make this for his birthday.

Moist Carrot Cake

Excellent carrot cake. Very moist. I only used 1 1/4 c. oil. I had to bake it about 45-50 minutes in order for the center to cook through.

Strawberry Pie II

This pie (actually, pies since I made 2) got rave reviews at our Memorial Day picnic. Everyone in my family enjoyed it. I was a little disappointed that it ran a bit when I sliced it. Wasn't as pretty as I would have liked but no one seemed to mind!

Turkey Burgers

Sorry, but I thought these were terrible. Even the addition of fresh parsley and some breadcrumbs plus lots of ketchup, mustard and pickles couldn't save these "burgers".

Jay's Signature Pizza Crust

Excellent crust. Enough for two pizzas. I used white sugar instead of brown and added a little crushed dried rosemary with the oil and salt. I would start out adding more than 2 1/2 cups of the flour. Maybe 3 and then work the rest in as you knead it.
