Crustless Spinach Quiche

Pig Burger

Made this "Australian" sandwich at a bon voyage party for my parents who are leaving on a 35 trip to ANZAC. I marinated the chicken in Lawry's Lemon Pepper marinade. I made herb mayonnaise with mayo, fresh thyme & basil, lemon juice & zest. Got very good quality rolls and served with guac, mayo, bacon (split in half, not crumbled), lettuce & tomato. We liked it heaps!

Italian Sausage, Peppers, and Onions

I just made this last week. It was delicious. I blanched the sausage in the microwave with some water for ~5 minutes, then cut it up and browned it in some oil. I added fresh basil at the end.

Vegan Bean Taco Filling

Very good and easy to make. I only mashed one can of the beans and left the other whole. I only used a pinch of cayenne. I filled burrito-sized tortillas and then "fried" them for a few minutes in a non-stick pan coated w/ vegetable spray.

Tropical Coconut Black Bean Soup

This soup is quite good but I think could be even tastier with additional spices. I started by sauteeing chopped onion and carrot and then proceeded with the rest of the recipe. I think the recipe could use some other spices as well.

Christmas Bark Candy

Instead of using chips, I recommend using 10 oz. of good quality white chocolate. Coarsely chop it before melting it (either in double boiler or at 70% power in microwave.) This candy is addicting!

Slow Cooker Stuffing

This was very good! I used about 2-2 1/2 cups of broth. I substituted red pepper for the mushrooms and used 1/3 cornbread crumbs and 2/3 bread cubes. I think the red pepper gave it a nice color. I cooked about 6-7 hours. I made a "backup" stuffing in the oven just in case this one didn't work out. Next year, I won't need to . . . I'll just make it in the crockpot!

Easy Slow Cooker French Dip

Delicious!! I didn't change anything. I used "mini" kaiser rolls. This recipe is so easy to make and turns out great. I sliced the meat and returned to slow cooker to heat through and let meat get juicier.

Migas II

This is incredibly easy -- I followed the recipe exactly although it would be easy to add just about anything (salsa, cheese, mushrooms, onions, etc.) My kids really liked it--quick, easy meal when you are pressed for time.

Barbecued Beef

Delicious and very easy to make!! I cooked it overnight for about 8 hours. I then shredded the beef and stored it separate from sauce in refrig. Later on I skimmed fat from sauce and then put both sauce and beef back in the crock pot for about an hour. Served on mini kaiser rolls.

Sweet Potato Pie I

Delicious and easy to make. I did not alter the recipe at all. Everyone enjoyed this pie -- I served with a scoop of vanilla ice cream. We all agreed it didn't taste at all like a sweet potato but was still very yummy!

Sweet and Sour Meatloaf

My 9 year old son really liked it but my husband said I've made better meatloaves. I used half a chopped onion instead of dried onion. Also cut sugar to 1/4 cup in sauce.

Pumpkin Pancakes

These were a big hit with my kids and hubbie. Served them for dinner. I used about a cup of buttermilk, a cup (at least) of regular milk, and omitted the vinegar. Will definitely make them again!

Blueberry Cream Cheese Pound Cake I

This cake was fantastic!! So moist and sweet. Even my mom, who's not a sweet eater, had two pieces and asked for the recipe. Per others' suggestions, I used a pint of blueberries and baked at 350 degrees for 45 minutes.

Jay's Signature Pizza Crust

Excellent crust. Enough for two pizzas. I used white sugar instead of brown and added a little crushed dried rosemary with the oil and salt. I would start out adding more than 2 1/2 cups of the flour. Maybe 3 and then work the rest in as you knead it.

Turkey Burgers

Sorry, but I thought these were terrible. Even the addition of fresh parsley and some breadcrumbs plus lots of ketchup, mustard and pickles couldn't save these "burgers".

Strawberry Pie II

This pie (actually, pies since I made 2) got rave reviews at our Memorial Day picnic. Everyone in my family enjoyed it. I was a little disappointed that it ran a bit when I sliced it. Wasn't as pretty as I would have liked but no one seemed to mind!
